Almond Tart with Lemon Glaze

A tart with the unique flavor of the almond, the thin lemon glaze crust and a crispy base, buttery and delicious.
If you like tarts, this one will delight you. Easy, quick and simple to make, to accompany your coffee, tea or juice.

Ingredients for the Dough

  • 200 gr/ 7 oz sifted flour
  • a pinch of salt
  • 110 gr/ 4 oz butter
  • 2 small egg yolks
  • 2-3 tbsp cold water
  • 1 tbsp orange zest

Filling

  • 80 gr/ 3 oz melted butter
  • 120 gr/ 4 oz sugar
  • 120 gr/ 4 oz almond powder
  • 2 eggs, beaten
  • 4-5 drops almond essence
  • 3-4 tbsp jam

Instructions

Put the flour and salt in a bowl.
Add the minced butter.
Rub the mixture until it becomes crumbs.
Add the egg yolks and water to make dough soft and supple. Add some flour if necessary.
Add the orange zest.

…we put the mix covered in the refrigerator to tighten for ½ hour.
Remove the dough from refrigerator and roll out a sheet with a diameter of 18-20 cm/ 7.5", or about the size of the tart pan.
Place the dough on the base of the pan, opening a little on the well buttered side. If the dough does not spread easily, transfer it directly to the pan and shape it by pressing with your hand on the base.
Spread the jam over the dough, on the base of the tart.

Filling

Mix the melted butter, the sugar, the almond powder, the beaten eggs, the orange zest, and the drops of almond essence.
Pour the filling mixture over the jam.
Bake in a preheated oven at 180°C/ 350°F/ Gas Mark 4 with the heat from above & below, for 30' or until the filling is cooked and golden.
Check also that the bottom has been cooked well. Remove from the oven and let it cool.

Glaze

  • 150 gr/ 5 oz icing sugar
  • 4-5 tsp lemon juice
  • few flaked almonds, toasted for garnish
When the tart has cooled we prepare the icing, with the icing sugar and the lemon juice. Add a little juice - just to have a smooth thick cream that we can spread.
Spread the glaze over the pie, leave 2 to 3 min to take its place. Sprinkle with flaked almonds, which we have slightly roasted.
Put it in the refrigerator for at least 10 min before serving.
