Carrot Halwa

The blogosphere is rich with an amazing diversity of interests of all. The ability to see, get informed and read about everything of interest is limits.
One of my favorite pastimes is to visit similar blogs to mine, cooking blogs. This way I see and admire exquisite dishes from around the world! I like traditional recipes from different cuisines, most of which do not even know they existed and would not have a chance to taste at their place of origin.
Some I like, others I don't but all I find interesting.
The recipe I chose for today is an Indian dessert from a very interesting blog with Indian dishes. It is a simple, easy recipe with few ingredients. I made some small contributions without affecting the result. If you like it, give it a shot, and you will enjoy a tasty dessert.

Ingredients (3 servings)

  • 2 cups grated carrots
  • ¾ cup brown sugar
  • 3 cups milk
  • 3 tbsp melted butter
  • some pistachios
  • 2 tbsp coconut for garnish
On medium heat, in nonstick pan, melt one tablespoon butter and add the coconut to get a golden color. It should not take more than 3'.
Remove the coconut and put aside for decoration at the end.
In the same pan put the other two tablespoons butter, add the carrots and the sugar and allow to it to melt.
*Add the milk cup by cup, so that it does not swell and gets spilled.
Lower the temperature and let it cook over medium heat until the milk evaporates. We repeat with the other two cups of milk. In the end there will be not any milk left.
* It will take long to boil the milk.
Butter the forms, and fill them pressing with a teaspoon.
Allow to cool thoroughly and serve inverting on a plate. The ingredients are for three small bowls.
Sprinkle with roasted coconut and add the chopped pistachio.
