Chocolate Chip Muffins

Muffins!
Small, fluffy and aromatic little muffins with chocolate chips and a topping of sweet cherries!
A simple dessert that is easy and fast and we can enjoy without too much guilt, because it doesn't have a lot of sugar and butter.

Dry Ingredients (12 muffins)

  • 300gr/ 10.5 oz flour
  • 100gr/ 3.5 oz sugar
  • ½ sachet (10 gr/ 0.40 oz) baking powder
  • a pinch of salt
  • 100gr/ 3.5 oz chocolate chips

Liquid Ingredients

  • ¼ litre/ 8.5 fl oz milk
  • 2 eggs
  • 75 gr/ 2.7oz melted butter
  • 12 cherries from sweet cherries in the syrup, drained
In a large bowl, whisk together the flour, baking powder, salt, and sugar. Stir.
In another small bowl, whisk together the eggs, milk, melted butter and the syrup from the drained cherries.
Pour the wet ingredients into the dry ingredients and add the chocolate chips.
Stir with a whisk or spoon 3-4 times, to slightly mix the ingredients.
The less you mix the better. The muffins will get fluffier.
Line a 12 cup muffin tin with paper liners and put about a tablespoon of muffin batter in each one.
Fill the bags by ⅔.
Put a cherry on each muffin.
Bake the muffins in preheated oven at 180°C/ 350°F/ Gas Mark 4, for 20 minutes until risen and their surface get a golden color.
Remove them from oven and let stand for 5 minutes on a rack.
