Pepper Phyllo Pie
Pepper Phyllo Pie, juicy with colorful peppers, mushrooms and cheese.
Included of course is the Bechamel white sauce because it works consistently with all the other ingredients to give us a delicious pie that is fluffy and juicy.
A pie that has everything needed for a tasty result with crispy sesame phyllo.

Pepper Phyllo Pie

Ingredients (~10 servings)

  • 1 package of 6 phyllo for traditional pie
  • 6 colorful peppers
  • 1 onion
  • 3 glove garlic
  • 1 can mushrooms 230g/ 8 oz drained
  • 1 small glass red wine (optional)
  • 400g/ 14oz various cheese
  • ½ of a small glass gratedolive oil (plus what needed for the brushing of the phyllo)
  • salt & pepper & some sesame
Grate the cheese in the coarse grater and leave them for later.
Drain and rinse the mushrooms thoroughly. Cut the peppers and the onion into small cubes.
Put half the oil in the pan, let it get hot, sauté the chopped garlic, add the onion and after a while the mushrooms.
Let it absorb the liquid and towards the end quench with half of the wine. Will will add the other half wine to the peppers in a while.
Remove mushrooms and put them in a bowl. Add the remaining oil and the peppers to saute in the pan.
At the end add the remaining wine. Let aside to cool.

bechamel sauce

  • 2 tbsp olive oil
  • 1 tbsp flour
  • 200ml/ 7 fl oz
  • 1 egg
  • 1 handful of grated cheese
Place the olive oil and the flour in a nonstick skillet and let them to cook for few minutes. Heat the milk slightly. Pull the pan from the heat start to add the milk in a constant and continuous flow, stirring vigorously. The temperature of both ingredients should be as close as possible. Put the pan back on the heat until it boils. Withdraw and leave aside to cool. Add the egg and a handful of grated cheese. Add salt and pepper to our taste.
Put all the ingredients (mushrooms, peppers, grated cheese and cream) together in a large bowl. Stir well to mix the ingredients.
In a lightly oiled baking pan, spread a phyllo, grease and add the second phyllo. Put half the dose of the stuffing on top so that it is spread all over the surface. Add two more phyllos on top, and pour the remaining half of the filling. Cover with the last two phyllos, oiled as before. Sprinkle some water on the surface of the pie, cut into squares and sprinkle with sesame seeds.
Pepper Phyllo Pie Bake the pie in a preheated oven at 200°C/ 390°F/ 6 Gas Mark with up & down resistance for 1 hour. If in twenty minutes we see that the pie has already gotten some color, cover with baking paper or foil.
Make sure that the bottom of the pie is cooked well.
