Baklava Muffins

Muffins with the flavor of the baklava.

Baklava Muffins

Ingredients (12 muffins), Filling

  • 100 gr/ 3.5 oz walnuts, chopped
  • 80 gr/ 2.8 oz demerara sugar
  • 2 tsp cinnamon
  • 50 gr/ 1.8 oz butter, melted
  • 130 gr/ 4.5 honey
At first make the filling.
Melt the butter in the microwave or in a pot. Just melt it, don't make it hot.
In a small bowl put the chopped walnuts and pour over them the melted butter.
Add the cinnamon and sugar. Mix well and set aside for later.

Ingredients, Dough

  • 210 gr/ 7.4 oz plain flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 80 gr/ 2.8 oz caster sugar
  • 1 egg
  • 50 gr/ 1.8 oz unsalted butter, melted
  • 170 gr/ 6 oz yogurt
  • 80 gr/ 2.8 oz milk
In a large glass, add the yogurt and milk and mix to be homogenized. Pour into a medium bowl.
Add the melted butter and egg.
Mix lightly, just to break the yolk.
In larger bowl sift the flour with the baking powder and the baking soda. Make a well in the dry ingredients and add gently mix in the wet ingredients.
Mix very gently and briefly, just to mix the ingredients. Don't hassle with the dough.
Fill 12 muffins cups with a spoonful of dough. Put a spoonful of the filling on top and again a spoonful of dough.
Put any remaining filling on top of the muffins.
Bake in preheated oven at 180°C/ 350°F/ Gas Mark 4, for 20′.
Remove from the oven and let cool on a rack.
If the honey is thick, heat it with two tablespoons water, and pour it over the muffins.
