Feta Phyllo Triangles

Mini crisp, triangular cheese pies, very tasty, wrapped in a thin crust.
A few minutes in the oven, to get a golden appetizer!
One Finger Food, served easily and excellent for our meetings or our family table. They get eaten realy fast, so make sure you make enough.
The mini pies can be prepared ahead in time and put in the oven when you need them.

Feta Phyllo Triangles

Ingredients (12 pieces)

  • 2 sheets phyllo pastry
  • 150 gr/ 5.3 oz feta cheese
  • 50 gr/ 1.8 oz soft yellow cheese
  • 1 egg
  • 2-3 tbsp milk
  • freshly ground pepper
  • vegetable oil
Mash the feta cheese with a fork, and add the yellow cheese and pepper.
In a bowl beat the egg with the milk and add the ¾ of this mixture to the cheese. You will need remaining egg for spreading over the triangles. Mix well.
Cut the sheets into 5-6 strips from the lower side of leaf. Spread a little oil over each strip and put a tablespoon of cheese mixture on top of the strip. Always wrap diagonally up the strip to the top…
…and enclose the cheese mix in the sheet strip.
Brush with the egg mixture.
You can cut thin strips of sheet and attach them on the pies, which when cooked will get a nice golden color.
Place them on a greased pan with the join facing down.
Bake in the oven with air at 180°C/ 350°F/ Gas Mark 4 for 20 minutes or until golden and cooked well.
