Oven Baked Fish with Tomato

Ingredients (5 servings)

  • 1 kg frozen cod fillet roll
  • 5 onions
  • 5 garlic cloves
  • 5 ripe tomatoes
  • 100 ml olive oil
  • 2-3 bay leaves
  • 5 allspice grains
  • 1 chili pepper
  • 1 tbsp turmeric (optional)
  • salt & pepper
Defrost the cod fillets and wash with water and vinegar. Put in a colander to drain well.
Peel, wash and cut into crescents the onions, tomatoes and garlic.
In the bottom of a Pyrex put 2 tablespoons olive oil and spread a layer of just some onion and a few slices garlic.
Cover with a layer of sliced ​​tomatoes. Sprinkle with salt, pepper and turmeric.
Add 2 grains allspice, chili pepper and a couple of bay leaves.

Repeat the same layers until you run out of ingredients.
Cover and bake at 180°C/ 350°F/ Gas Mark 4 for 1½ hours or until the food is cooked.
