Pistachio Cheese Balls
One bite appetizer, round cheese ball, sprinkled with pistachios, filled with a berry or grape.
A spicy treat with Roquefort or blue cheese, which replaces the usual form of the traditional appetizer platter of cheese with wine.

Pistachio Cheese Balls

Ingredients (∼20 pieces)

  • 100 gr/ 3.5 oz rocquefort or blue cheese
  • 150 gr/ 5.3 oz sour cream
  • 2 tbsp fresh cream
  • 20-25 large grapes
  • 100 gr/ 3.5 oz pistachios, chrushed
The ingredients must be at room temperature.
Whisk the cheese, the sour cream and the 2 tablespoons fresh cream in the mixer…
…until the mixture is smooth like cream and homogeneous.
Refrigerate for about an hour, so it's easy to work with.
Crush the peanuts and set aside for later.
Choose seedless grapes, such as sultanas.
Wash the grapes and pat dry on absorbent paper towels.
Remove the cheese mixture from the refrigerator, get a spoonful in hand, put at the center a grape and shape with your palms a little ball.
There is no need for a large quantity of cheese. A thin layer around the grape is enough.
Roll the ball onto the ground pistachios and place it on a tray or bowl.
Repeat until the cheese mixture is over.
You should get 20-25 cheese balls, depending on the size.
Place the bowl in the refrigerator for 1-2 hours.
