Apple Pancakes!
Very tasty, fluffy, and flavored with the ethereal scent of lemon. Simply irresistible! Sprinkled with a thin veil of powdered sugar or thyme honey.
With the simplest ingredients make the batter -eggs, flour, milk-, and in which you will add grated apple.
If a simple, delicious, light, and easy delicacy can improve a "dull" Sunday morning, then the best option are these apple pancakes.

Apple Pancakes

Ingredients (40-45 Apple Pancakes)

  • 2 eggs
  • 230g/ flour
  • 2 tsp baking powder
  • 200ml milk
  • 3 tbsp sugar
  • 1 pinch salt
  • 3 apples
  • 1 lemon, zest
  • vegetable oil, for frying
  • icing sugar, for dusting
  • honey
In a small bowl mix the dry ingredients: flour, baking powder, sugar and salt.
In a medium size bowl beat the eggs well and add the milk.
Add the flour mixture to the egg mixture, stirring gently to homogenise the ingredients.
Add the lemon zest.
With quick movements clean the apples one by one and grate them on the coarse grater, above the mixing bowl.
Stir the batter to incorporate, to keep the apples from turning black.
In a nonstick skillet, pour a thin layer of oil - renew it for every batch - and let it warm up in low to medium heat but not burn.
When the oil is heated enough, add spoonfuls of the mixture of porridge in the perimeter and well spaced.
Cook well on one side and turn with a spatula from the other until cooked and golden.
Keep them hot together on a plate (in the oven chamber) until you finish the pancake mix.
Server warm.

Sprinkle with powdered sugar, honey, maple syrup, homemade sweets, jam or whatever else we like!
You can even consume them with savory flavors, such as ham, delicious Greek cheese, fried eggs, etc, eventually leading to a nice brunch for our own, exclusive, relaxing, Sunday morning.
Serve the pancakes while sipping fragrant warm tea, soothing, aromatic coffee, warm milk, fresh juices!
