Anchovies Bruschetta with Tomatoes and Mozzarella

Golden brown crispy slice of bread and on top of it lazily resting a red, juicy tomato, a salty anchovy and white mozzarella!
Bruschetta, for a tasty snack for any time of the day we feel like. Originating from the very interesting and varied Italian cuisine.
I would recommend to use as little anchovy as possible because you risk to cover the taste of the other ingredients due to its intensity.

Ingredients (4 servings)

  • 4-6 large slices of bread
  • 4 tomatoes
  • 3 mozzarella balls
  • 4-6 anchovy fillets
  • 2 tbsp oregano
  • 5 tbsp olive oil
Grease the bread slices with a brush, put them on an aluminum foil and grill them in the oven to golden.
Meanwhile slice the mozzarella and tomatoes.
Spread over each slice of bread a few slices of mozzarella and sprinkle with oregano.
Spread some tomato slices. Sprinkle with a little olive oil. Sprinkle again with oregano.
Put a couple of anchovy fillets.
Bake at 180°C/ 350°F/ Gas 4 for 20'-25' or until cheese melts and tomates are baked.
Serve and enjoy a delicious snack with intense Mediterranean flavors.
