Greek Giant Baked Beans

Baked giant beans.
Considered one of the tastiest dishes of traditional Greek cuisine, a dish that Greeks and visitors foreigners love. Simple yet so delicious and useful for our diet.

Greek Giant Baked Beans

Ingredients (6 servings)

  • 500 gr/ 1.1 lbs giant beans (lima beans)
  • 400 gr/ 14.1 oz canned tomatoes, mashed
  • 2 fresh tomatoes, grated
  • 2 onions, coarsely chopped
  • 100 ml/ 3.4 floz olive oil
  • 2-3 bay leaves
  • 2 carrots
  • 1 peperoncino (chili pepper)
  • salt & pepper
Put the beans, from the previous evening, in a bowl with plenty of water and a tablespoon of coarse salt.
The next day, drain them and boil covered in fresh water with chopped onions and sliced carrots for ~30' or so, until softened well, almost ready to eat.
The fresher the beans, the more white they are, and easier to cook.
When almost cooked transfer to the ovenproof dish in the oven, with a bit of their boiling water, and add the bay leaves, the pepper, the…
…olive oil, mashed tomatoes, salt and pepper.
Stir with a spoon to mix the ingredients.
Keep aside 200 ml/ 6.8 floz hot boiling water, that you may need to add later.
Put the pan in the oven, uncovered, to evaporate some of the water and brown the beans, at 180°C/ 350°F/ Gas 4 for 60' or until thoroughly cooked.

Greek Giant Baked Beans Giant beans should not be prepared as bean soup. No need for too much tomato sauce! Keep the food relatively dry.
