Jam Roll

Ingredients (6 servings)

  • 130 gr/ 4.6 oz cold butter, cut into pieces
  • 230 gr/ 8.1 oz flour
  • pinch of salt
  • ∼150 ml/ 5.1 floz cold water
  • 4-5 tbsp jam

Topping

  • 1 tbsp milk
  • 1 tbsp brown sugar
  • 2 tbsp melted jam for serving
Prepare the dough in a bowl.
Sift the flour and add the butter and salt.
Add the water slowly, until you have a soft dough, which will stick in our hands. Do not knead too long. You may not need all the water.
Transfer the dough to a lightly floured surface…
…and roll out a rectangular sheet measuring 25×35 cm/ 10"×14", approx.
Spread the jam on the surface of the dough, leaving around a margin of 1-2 cm/ ½".
Wet the edges with water and turn toward the jam.
Roll gently (not tightly), starting from the shortest side and let the join facing down.
Cut a piece of greaseproof paper or baking paper, a little smaller than the roll and grease lightly.
Place the roll on the paper. Wrap the paper twisting at both ends, creating a small "boat" containing the roll.
Wet the surface of the roll with some milk using a brush, and sprinkle with brown sugar.
Bake for 30'-40' or until golden.
Jam RollServe with some of the same jam, that you have warmed, adding a little water to melt it slightly and let it run on the cake.
Try it!
