Cherry Pie

Cherry pie with crunchy, delicious, beautiful and bright red cherries in a well baked brown cake. Mascarpone's addition, the unique Italian cheese, with which we make the tiramisù, makes it irresistible.
A pleasant taste to accompany your coffee, for your Sunday breakfast.

Ingredients (8 servings)

  • ½ kgr/ 1.1 lbs cherries
  • 250 gr/ 8.8 oz mascarpone cheese
  • 4 eggs
  • 150 gr/ 5.3 oz almond crumgs
  • 100 gr/ 3.5 oz stevia-truvia (160 gr ζάχαρη)
  • 100 ml/ 3.4 floz milk
  • 250 gr/ 8.8 oz farina up
  • 1 tsp baking powder
  • 1 pinch salt
  • ½ tsp cream of tartar
  • little icing sugar for dusting (optional)
Wash cherries and remove stems and seeds with the special tool.
Separate egg whites from the yolks and beat the egg whites to stiff meringue adding the salt and the cream of tartar.
In an electric mixer beat the yolks with the mascarpone.
Keep adding the stevia (sugar) beating until it rises.
Add the almonds crumbs.
Add the flour and baking powder, sieved, alternating with milk.
Stir gently.
Finally incorporate the whipped meringue gently with circular movements from the bottom up.
Butter a cake mold and sprinkle with sugar.
Pour half the beaten mixture and spread the cherries over it. Cover with the remaining mixture.
Bake in preheated oven at 180°C/ 360°F/ Gas 4 for ~40'.
We pick cherries are not very mature. They can withstand baking heat.
If you do not have the special tool to remove the kernels, do it with a knife, cutting the cherries in two.
