Ingredients (8 servings)

  • 400 gr/ 14.1 oz grape berries, black or white
  • 130 gr/ 4.6 oz butter
  • 6 eggs, whites only
  • 70 gr/ 2.5 oz self raising flour
  • 1 tsp baking powder
  • 40 gr/ 1.4 oz almond meal
  • 2 tbsp honey
  • 2 tbsp roasted pine nuts, optional
  • 80 gr/ 2.8 oz Stevia Truvia ή 160 gr/ 5.6 oz sugar
Melt the butter and leave for a little aside to cool.
Separate the egg whites from the yolks and beat the egg whites into meringue.
Grease a mold with a detachable base.
Wash and dry the grape berries, black or white (seedless), and spread them at the base of the mold.
Beating the meringue add gradually the stevia (or sugar)…
…flour, baking powder and almond meal.
Mix, with a spatula, the melted butter.
Finally add the roasted pine nuts and honey.
Stir to make a thick batter.
Pour the mixture into the mold, on top of the grapes.
Bake in preheated oven at 170°C/ 340°F/ Gas 4 for 30' or as needed to cook. Test with the blade of a knife to come out clean.
Remove from the oven, let cool on a rack and overturn on a platter.
The sweetness of this Clafoutis depends on how sweet the grapes are.
