"Youvetsi" Baked Pork with Orzo Pasta

Sunday, traditional and very hearty Greek dish with all the family concentrated for their enjoyment.
Made with many types of meat such as lamb, pork, beef and chicken. Here the suggestion is pork.
Simple ingredients: meat with pasta, tomatoes and spices. The salty grated cheese at the end, essential finishing touch for an even better taste.

Ingredients (8 servings)

  • 2 kg (4.4 lbs) pork, shoulder
  • 1 package 500g (1.1 lbs), chopped tomatoes
  • 2 tomatoes, fresh
  • 2 onions
  • 1 carrot
  • 5 grains allspice
  • 1 stick cinnamon
  • salt & pepper
  • 50 ml (1.7 floz) olive oild ελαιόλαδο
  • 2 tbsp butter
  • 500g (1.1 lbs) orzo thin
  • grated Parmesan in servings
Peel and finely chop the onions and tomatoes into small cubes and carrots into rounds.
In a large clay pot, add the meat, the chopped tomato (from the packaging) and the chopped vegetables.
Add 250ml water, spices and pepper.
Cover the pot with the lid and bake at 200°C (392°F, 6 Gas) for ~2 hours or until the meat is tender and well cooked.
Halfway through the baking time check the food.
Turn the piece of meat on the other hand and put it bakc in the oven. If necessary add a little hot water.
As the food is cooked, prepare the orzo.
Place in a pan of butter and roast the orzo well, stirring frequently until lightly browned. This way remains granular.
Add it to the cooked meat of the hull together with 700 ml (1.48 Pts) of hot water.
Mix well and add a little salt if needed.
Puts the pot in the oven and continue baking until cooked orzo and absorb almost all the sauce to eat. Better to stay fairly juicy, because the pasta will continue to absorb sauce until it will be served at the table.
