The Banoffee Pie is a very tasty and easy to prepare cake of English origin, with caramelized sweetened milk, bananas and whipped cream.
There are several versions but always the central idea remains. Here my suggestion is a simple and fast way to enjoy Banoffee Pie made ​​by us.

Banoffee Pie

Ingredients (8 servings)

  • 300 gr (10.6 oz) biscuits
  • 100 ml (3.4 floz) espresso coffee
  • 70 ml (2.4 floz) milk, cold
  • 3 bananas
  • 300 gr (10.6) sour cream
  • 1 tbsp icing sugar
  • cocoa or grated chokolate for sprinkling

Caramel

  • 70 gr (2.5 oz) sugar
  • 70 gr (2.5 oz) butter
  • 1 κουτί×397 gr (14 oz) sweetened milk
You make a cup of espresso and mix with cold milk. Within this mixture dip cookies with fast motion, and you lay them as base -two layers- and the sides of a form 20-22 cm (7.9-8.7 inches).
Leave them aside for a while.
In a nonstick saucepan put the sugar and butter and let it caramelize, getting bright golden color, without mixing it. Lift and move the pan. When caramelized you add the sweetened milk. Mix and cook the mixture over medium heat for 6 to 7 min, not more.
Once the caramel is ready, let it a few minutes to cool off and pour on the form of cookies.
Leaving aside the form to cool or put it in the freezer for a few minutes.
Beat the sour cream with a tablespoon of icing sugar.
Cut into slices or smaller pieces of one and a half banana and put it into the whipped cream.
Spread the whipped cream with a spatula or the back of a spoon over the caramel.
Remove the banoffee from the form. Cut into slices the remaining bananas. Place them on top of the whipped cream and sprinkle with cocoa powder.
The Banoffee is kept refrigerated. When it is to be served, remove from the refrigerator for 10-15 mins to soften the caramel.
