Melon and Mozzarella Salad

Well known, small Cantaloupe with orange, sweet flesh and the delicious aromas give in this salad the dominant presence, combined with thinly sliced ​​prosciutto, a unique sausage for lovers of contrasts. The chewy mozzarella balances the bite of chilli flakes and basil.

Ingredients (4 servings)

  • 1 ripe cantaloupe ∼½ kg (1.1 lbs)
  • 250 gr (8.8 oz) mozzarella
  • 2 tbsp olive oil
  • ¼ tsp chili flakes crushed
  • few leaves of fresh basil
  • salt & freshly ground pepper
  • 12 slices thinly sliced prosciutto
Cut the melon in two and clean, peel, and remove seeds.
Cut the flesh into bite-sized pieces and assemble them into a bowl.
Drain the mozzarella, cut it into small pieces and add to the mixing bowl. Sprinkle with olive oil and sprinkle with pepper, salt and pepper. Add the basil and serve on a platter. Place around prosciutto, shredded by hand.
