Savory Cheddar Cheese Muffins

Ingredients (6 muffins)

  • 100 gr (3.5 oz) sour cream
  • 4 eggs
  • 60 gr (2.1 oz) desiccated coconut
  • 100 gr (3.5 oz) cheddar
  • 1 tsp garlic powder
  • 6 green olives, pitted
Cut into very thin pieces the cheese or grate on coarse grater and place in a bowl. Add the coconut and garlic powder.
In another medium sized bowl, add the cream and eggs. Beat with a wire kitchen for a while, until blended.
Close to add the dry mixture of cheeses.
Stir gently from top to bottom for very little.
Fill 6 silicone cases for muffins. From top and in the center place vertically an olive.
Bake in preheated oven at 170°C (338°F, Gas 3.5) for ~25'-30'. Allow to cool and test.
