Potato Salad with Aromatic Spices
Potato salad hearty and fragrant.
A simple boiled potato salad can be given flavor by adding aromatic spices & herbs, and give a hearty dish on its own or to accompany a seafood dish. In our table it combined with the Grilled Octopus in Parchment Paper.
The mustard with whole grains is much more palatable than the other common ones. Spices, each alone is very fragrant and combined tantalise the taste of the dish into which will be added. Finally a little bit of spring onion and fresh parsley add color and flavor to all.

Potato Salad with Aromatic Spices

Ingredients (4 servings)

  • 750g (1.7 lbs) boiled potatoes
  • 2 tbsp wholegrain mustard
  • 5 tbsp extra virgin olive oil
  • 1 lime zest & juice
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 2 spring onions, diagonally sliced
  • 4 tbsp parsley leaves
  • salt & pepper
Peel, wash, and cut into round slices half a centimeter (0.2 in) and boil the potatoes in salted water for ~8'. Do not overboil them. Drain and turn them back into the pot or pour them in a bowl.
As is hot add the mustard, coriander, cumin and turmeric. Sprinkle with salt and pepper.
Sprinkle with olive oil. Add the juice and zest of lime. Mix keeping the pot by the handles. Allow the salad to cool.
Meanwhile clean, wash and cut into diagonal slices the onions and finely chop the parsley. Pour half of them into the salad. Mix by shaking. Put the salad in a bowl. Sprinkle with remaining onions and parsley.
