Crostini with Whipped Feta and Tomatoes
Toasted slices of fresh bread-Crostini, sprinkled with olive oil, spread with a lemony whipped feta cheese, and a… salad on top, are a very tasty morsel in summer mood to combine with a cold beer. If the beer is flavored with honey and coriander, then the aromas and flavors increase and enjoyment doubles.
It is a good suggestion for a light and quick dinner, you just have to try them.

Crostini with Whipped Feta and Tomatoes Crostini with Whipped Feta and Tomatoes

Ingredients (8 Crostini)

  • fresh bread
  • 200 gr (7.1 oz) feta cheese
  • 60 gr (2.1 oz) sour cream
  • 1 lemon
  • 40 gr (1.4 oz) olive oil
  • 3 ripe tomatoes
  • 1 spring onion, chopped
  • a few basil leaves
  • 1 tbsp vinegar
  • 1 tbsp oregano or thyme dried
  • salt & pepper
Cut the bread into slices and toast them.
To make the feta dip in a blender mash the feta cheese, using the sour cream, along with 2-3 tablespoons olive oil, 2 tablespoons lemon juice and its zest. We try and bring our flavors.

Wash and cut into a bowl the tomatoes in slices or small pieces. Add the spring onions, chopped basil, vinegar, 2 tablespoons oil, thyme and salt and pepper.
Put on each toasted bread slice a spoonful of whipped feta and spread to the entire surface of the bread.
Stir well to mix the salad ingredients and put them on each crostini, above the greased slice, a large spoonful of salad. Sprinkle with a little salt and chopped basil and enjoy.
