Tasty summer dish as a main but also accompanying tsipouro meze. Garnished with chopped onion, parsley, oil and lemon and sprinkled with freshly ground pepper, sumac & chili peppers for color and flavor and all together for health and vitamins! Whether you say it bean salad or Turkish piyaz, is one of the most classic dishes with beans after the bean soup.
All beans contain high amounts of protein and fiber. An amazing combination for the protection of the digestive system and moving the food through the intestines. Fiber helps to better digest food and help ensure that the waste products to be eliminated. It is known for their irreplaceable effects in the digestive tract, while protein helps the body to maintain optimal health and build healthy muscle mass.

Ingredients for cooking (4 servings)

  • 250 g (8.8 oz) white beans, dry-uncooked cannellini beans
  • 1 small onion, dry
  • 3 tbsp olive oil
  • ½ tsp coarse salt
Soak the beans in warm water for six hours or overnight.
Next day, drain the beans from the water they soaked, rinse and place in a saucepan with enough cold water to cover them well. Add 3 tablespoons oil, chopped onion and salt.
Boil for 30 minutes or until tender, without being dismantled and have absorbed almost all the water boiling. Drain, keeping a minimum stock of their cooking, and let them cool.

Dressing

  • cooked beans
  • 1 small onion, dry
  • 1 lemon juice & zest
  • 1 tbsp mustard
  • 2 cloves garlic, mashed
  • 60 g (2.1 oz) olive oil
  • ½ tsp coarse salt
  • freshly ground pepper & sumac
  • some chopped parsley
  • 1 red hot chilli pepper (optional)
Dissolve the mustard in lemon in a jar with a lid and add the garlic, lemon zest, oil and salt. Close the jar and shake forcefully to homogenize the ingredients.
Put the drained beans in a bowl mix with half the onion into thin crescents or chopped and a little bit of parsley. Pour over the dressing and a little salt. Mix well.
Serve in salad bowl and garnish from the top with a few slices of onion, which we kept, parsley and if you want cut a small hot pepper chilli round. Sprinkle with pepper.
Eaten pleasantly like appetizer but also as a main dish.
