A delicious Stuffed Recipe over the established traditional, classic recipe made by our mothers and grandmothers, with whatever vegetables they had available or their bowl and including all the big vegetables that could empty their crumbs and filled with rice only, without minced meat, but always delicious and aromatic. From eggplants, potatoes, pumpkins and naturally mature, reddish, vigorous tomatoes. Everything was used perfectly according to the wishes of everyone in the family.
The current proposal is with peppers only without excluding the remaining vegetables, if you like. The filling with minced meat and aromatic herbs also give a very tasty dish. They are made easy and fast since preparing to fill the peppers is not difficult or time-consuming.
We prepare them early in the morning to smell the kitchen flavors and aromas and until lunch time will have been cooked and will be quite lukewarm to enjoy them with feta cheese.

Although between us, with so many ingredients becomes easily main dish and consumed pleasantly.
One tip only: Fry the eggplants in too little oil and for very little. We do not want to absorb oil to spoil the freshness of this dish and to taste it.

The decadent black forest torte is the epitome of chocolate, which puts it in the podium it deserves to bring out the true spirit of the dream of every confectioner. For this recipe we need tomatoes that are at the peak of their maturity. Red, juicy, all together, small, medium, large, pizza-style in a puff pastry, sprinkled with the unique balsamic flavor, sprinkled with salt and a few fresh basil leaves. They come in the oven to brown for a while, so that they become crisp and crumbly at the same time.
You will like this tart, eaten as an appetizer but as your main dish too, with a green salad and cold beer.

This year our peach production was small. Some of these we enjoyed fresh and cool and some were made compote to keep them as long as we can and have them for various pastry preparations I had in my mind.
Basically the story behind this compote recipe was to make an ethereal blancmange (from the French blanc-manger). In retrospect, I realized the huge range of sweets, where we can use our hot or cold compotes. From the simplest dessert, such as on a velvety cream or yogurt, to something more complex, such as on or inside a fridge cake.
Today's suggestion is peach compote and jelly. Once the fruits have been prepared and made compost to become jelly it was the simplest dessert we could make and enjoy.

A traditional English cake that all we have to do is prepare a quick cake mix, stirring it gently, sinking cherries, with its pretty polka dot design and empty the mixture in an oven pan. It could not be simpler, no mixer, no blows, no long process, and fewer utensils for the sink.
It looks a lot like the french clafoutis, only the English in the classic form of cake use candied cherries. We preferred fresh cherries, which have already made their appearance on the market. I kept some for this and only the recipe because we love to eat them fresh.

No Knead Baguette
In our home we are not much of the bread, not because we do not like it but we just agreed to somewhat reduce the consumption of certain carbohydrates, removing from our usual diet this divine creature, the BREAD.
As a family with French references we could not say no to a fluffy, freshly baked baguette and thus give us the opportunity to encroach the terms of the agreement.
So we made Baguettes with a lazy process and special garnish to remind Greece but also the Mediterranean, have oil and salt, olives & tomatoes, garlic & pepper and fragrant, much smell, like when you cross dawn off the oven and take the smell of hot bread just came out. Thus they were born, inflated and baked four small baguettes, effortlessly, without kneading!
We exercised maximum restraint and character not to consume instantly. They lasted two days and the second day they were equally delicious, fluffy, delicious and very fresh. There was not third day to tell you how it was… Build them, you will not regret.

Warsaw is a city in east-central Poland and its capital with population of roughly 1.750.000. A city of contrasts with the recent past still fresh in the memories of most citizens, especially the older ones. Only the younger generation seems to escape from the nightmares of the past. The Poles have a classy look, without being snobs; they are a cultured people with a good soul.

In 1945, after the blitz, the protests, the fights and destructions the greatest part of Warsaw was rubble. Almost 85% of the city was destroyed, including the historic Old Town and the Royal Castle. Poles, men, women and children, with the help of communist parties from neighbouring countries, rebuilt the city from scratch after the Second World War. Museums, castles & palaces that visitors can explore but also picturesque alleyways with bars that tourists can enjoy an aromatic glass of warm beer, especially in cold weather. 

Split in effectively two cities, with the older section by far the most picturesque and interesting part of the city (in Unesco's protected cultural heritage list) and the newer city with modern buildings, reminders of the architecture styles of socialist realism. Large, wide roads, huge squares and huge, towering skyscrapers. Warsaw, along with Frankfurt, London, Paris & Rotterdam is one of the cities with the highest number of skyscrapers in Europe.

Warsaw's gastronomy will pleasantly surprise you, with many opportunities to try not only traditional Polish delicacies, but also international cuisine.

We walked for endless hours around the city, with varying weather conditions but the most memorable walk, was a stroll along the Vistula, one frozen sunset, the city covered in fog, the blue lights of the river bridge arches lighting our way. An outlandish landscape for our eyes and senses.

Marinated Salmon Fillets
Roast fillet of fresh salmon, marinated in a tasty and spicy sauce made from soy sauce, green onion, crushed garlic, hot red chilli pepper and ginger. The total time -preparation and baking to have served ready to our table- is only 40'. To remain juicy and irresistibly delicious bake only 10'-15'.
The dish has its own story to the delicious offerings of our two kitchens, with several tests -since everybody likes salmon- to become a family affair and to create what we now recommend only to you as a first publication. All kudos belong to the younger family chef, in her the only.

This cheese pie is made at the cake tin and gets a round pretty shape. The leaves are folded like a fan and close within them a dry mixture of cheese, semolina etc. When sliced becomes obscured the presence of the crust.

Fish boiled & Fish soup traditional, energizing and for many, very favorite soup with fresh fish.
To have a tasty soup what you need is nothing more than the good fresh fish. Not that it can not be done from frozen fish but definitely fresh is preferred. The dusky grouper, the white grouper, the scorpaena, european hake, etc. are ideal. Also the smaller fish, those that live near rocks make the best fish soup. You choose any fish or fish combination you like and enjoy it.
It is one of the most delicious and healthy dishes of Greek cuisine. The shrimp in the current proposal play the role of guest star is not a sine qua non. Fish soup can be made without them… The vegetables are for accompanying this dish. A light dish and if you choose the winter version is a dish of warmth and coziness.
