Savoy Cabbage Rolls with Campbell's Tomato Soup

Savoy Cabbage Rolls with Campbell's Tomato Soup
Savoy cabbage is a beautiful, winter, Chinese cabbage, the harder texture but very soft, sweet taste that makes all the difference in the routine of our known stuffed cabbage rolls. The leaves are so wide that are ideal to effortlessly wrap cabbage rolls.
We make a delicious mixture of minced meat, gently wrap the tender leaves of cabbage and place the thick rolls in a row in fireproof oven dish. Sprinkle with tomato from the famous Campbell's Tomato Soup and bake in the oven. Becomes festive first course to bring luck in the home, in the New Year meals, as the Chinese believe.
One of the most famous motifs of pop art is Campbell's canned tomato soup immortalized by the famous American artist Andy Warhol in countless versions, during the 1960s and 1970s. The first project in which Warhol used the Campbell's soup entitled Campbell's Soup Cans and created in the 1962.

Excerpt from the introduction:
«Αναρωτιέμαι συχνά που είναι το απόγειο της μαγειρικής. Είναι τα πιο φρέσκα υλικά, οι πιο πολύπλοκες γεύσεις είναι το καθημερινό ή το σπάνιο; Δεν είναι τίποτε απ΄όλα αυτά. Το απόγειο δεν είναι ούτε η κατανάλωση του φαγητού ούτε το μαγείρεμα, αλλά η προσφορά του φαγητού και η συντροφικότητα…»

Ingredients (6 servings)

  • 1 Savoy cabbage, medium
  • 250g (8.8 oz) minced meat
  • 80g (2.8 oz) rice, soaked in water
  • 1 onion
  • 1 garlic clove
  • 1 ripe tomato
  • 3-4 parsley sprigs, chopped
  • 2 carrots, grated
  • 1 can 300g (10.6 oz) Campbell Tomato Soup
  • 60g (2.1 oz) olive oil
  • salt, pepper, paprika
Divide and remove the outer somewhat hard leaves of cabbage. We choose 12 to 14 leaves from the cabbage, wash…
… and heat them one by one in boiling water from both sides to soften.
Remove them from the boiling water with a slotted spoon to a bowl on top of each other and let them cool.
When cool, remove with a sharp knife part of the back of the leaf the central stem, to enable you to wrap.
In bowl, prepare the filling. Pour into minced meat, the pureed vegetables and rice soaked in water for 20′.
Add the salt, pepper, a little oil and paprika. Knead to mix the materials. Pour about half the amount of canned Campbell and a little water if needed and re-knead to make a soft and juicy meat mixture.
Grease a fireproof oven dish and spread two tablespoons of tomato soup.
Take a boiled cabbage leaf and add 2-3 tablespoons of the filling, we have prepared, on the edge of the leaf.
Close the leaf from right and left.
Gently roll from the edge of the leaf to the stem to close well the filling.
Arrange the rolls in the oven dish in a series, with the union down.
Sprinkle with a little olive oil and the rest of the canned Campbell. Add from the edges a little hot water to boil. Gently cover with foil and bake the cabbage rolls in a preheated oven at 180℃ (356℉, Gas:4.2) with air for 45′-50′.
