Ingredients (3 servings)

  • 500g (1.1 lbs) pork, cut into pieces
  • 2 medium onions, cut in crescents
  • 2 cloves of garlic
  • 2 leeks, cut into 1-1.5cm pieces
  • 2 green peppers, cut into strips
  • 1 pepper red hot, optional
  • 120g (4.2 oz) white wine
  • 120g (4.2 oz) homemade chicken broth
  • 70g (2.5 oz) olive oil
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • salt & freshly ground pepper
In a large heavy pan with a lid and on medium heat, pour the oil to burn and make the pork from all sides to turn golden brown.
Once prepared, remove it from the saucepan and put it on a large dish. Keep it covered, warm until you need it.
In the same utensil cook the onion and garlic to caramel and golden. Stir regularly.
Add the leeks and peppers to saute for a while. Flavor with rosemary, coriander, paprika and salt with pepper.
Pour the meat that we have on the plate, mix well and quench with the wine. Once the alcohol evaporates, sprinkle with the broth and cover the pot. Cook for 30′.

This delicious dish is accompanied by fresh fried potatoes, rice, baked potatoes, etc. bathed with his sauce!

Homemade Chicken Broth

  • 1 chicken leg
  • 1 potato
  • 1 onion
  • 1 carrot
  • 2 tbls oil
  • salt & pepper
In a saucepan, add water to boil and then pour in, clean and cut the vegetables and chicken to boil well. Add more water if necessary to have 1 liter at the end or more if we want to keep it for 2-3 days in the refrigerator / maintenance or freezer for 6 months.
