Ingredients (~80 small cookies)

  • 400g (14.1oz) self raising flour
  • 120g (4.2oz) sugar
  • 100g (3.5oz) tahini
  • 1 large orange, juice and zest
  • 50g (1.8oz) brandy
  • 1 tsp soda
  • 1 tsp baking powder
  • 1 tsp cloves
  • 1 tsp cinnamon
  • little light oil for kneading
  • sesame for sprinkling
In a large bowl or food processor, add the sugar, tahini, brandy and half orange juice. Beat or mix until completely dissolved sugar.
In the glass with the rest of the orange juice, stir the soda to dissolve and add it to the bowl mix. Add the spices and the zest of the orange.
Pour half the flour with the baking powder and start to knead or beat the ingredients, adding each time and a little more until we make a pasty smooth, velvety. You may not need all the flour or need a spoonful yet, no more.
Put the dough in the refrigerator for 30'. Then we cut the cookies in a shape we like small or big. If the dough is slightly sticky, we wet our fingertips with a little bit of oil to make it easier to knead.
We lay them on a sheet of paper laid with baking paper. Anoint the surface with a little orange juice with a brush…
… and sprinkle with sesame seeds.
Bake the cookies in a preheated oven at 180℃ (356℉, Gas Mark:4.2) with air for ~20' or until they get golden edges and underneath.
Enjoy your favorite drink with 1 cookie or 2, or 3, etc. They should not seem a lot, consumed very quickly!
