Chilli con Carne

Chili con Carne (Hot Peppers with meat) are among the most famous, typical dishes of Tex-Mex (Texan and Mexican) cuisine. There are infinite variations on the basic recipe of this dish, which has its roots in Mexican cuisine and was the dish of the poor Mexican population. For sure it contains meat, hot peppers and spices. The rest -red beans, tomatoes etc.-, probably added in the course of transition in every continent.
It is intensely spicy to very spicy and what you need for this season of the year and for lovers of very spicy flavors. In our house we have one of those lovers and this dish is his favorite. So the more spicy the better. You moderate a little bit the hot doses of ingredients and enjoy it completely plain or on boiled rice, yogurt, mashed or baked potatoes, sprinkled with grated cheddar cheese and tortilla chips or wrapped in tortillas with a little corn and lettuce leaves. Consumed with zest as it is!

Ideal appetizer, excellent taste to combine on your table with Tyrokafteri (Spicy Feta Cheese Spread), that is as hot as we like. Accompany your appetite with beer or raki, without excluding a good red wine.
Tomatoes ripe, tasty and bright red are joined with the aromas of basil and mint, that's all. They do not need anything else to make a scrumptious appetizer except, perhaps, by a homemade spicy cheese dip, with lovely soft feta of Kefalonia, with its velvety taste and texture and of course… french fries!

Shrimp Bow Tie Pasta

Shrimp Bow Tie Pasta
Farfalle (butterflies) or Bow-tie are alternative names for the pasta, with beautiful bow shape. Dated from the 16th century in Lombardy and Emilia-Romagna in Northern Italy.
Bows, therefore, accompanied by wispy shrimp, chopped green onion, chives, coriander, chilli and lime and Peach!
I think this dish is perhaps the tastiest and most aromatic of pasta dishes, that I have at times suggested from the pages of Kitchen Stories. Seductive aromas and tantalizing smells emerge and gives pungent taste superiority.
If the ingredients and the composition convinced you, make it and enjoy it with a cold, dry, white wine.
