Today we are cooking delicious Lemon Chicken, braised with rosé wine (the same that will accompany our meal) in the Instant Pot. "All in one"!
The food is cooked in the juices of the accompanying vegetables, small carrots, potatoes, onion, garlic and basically without stirring. This way they come out of the cooker intact & presentable without disintegrating to be served on our table, so that we can enjoy a delicious and economical dish.

A simple and delicious combination of vegetables and meat. It is the healthiest version of consuming meat (Arnaki Fricassee).
Stamnagathi is one of the few vegetables that is equally enjoyable to eat raw, boiled or cooked.
It is best known from the coastal and mountainous areas of Crete where it grows wild, although in recent years it has been cultivated extensively in several areas of Chania.
We also find it wild in Central Greece, the Peloponnese and the Cyclades, even in Malta!

Το Osso Buco is the ideal piece of Veal Shank for a well-cooked Stew but also for the perfect Beef Soup. In fact, I recommend sautéing the Osso Buco in olive oil, so that it takes on color and flavor from each side, before it is cooked and accompanied along the way by selected vegetables and aromatic spices. Thus, an innocent Greek Stew can be deliciously hellish with its multi-layered, hidden deliciousness!
Some prefer to accompany this dish with Pappardelle, others with Oven-Fried Potatoes, Barley, Risotto, Polenta. This time we enjoyed it with a super extra Mashed Potatoes!

Savory Pumpkin Pie
It was the last pumpkin we had outside in the cool of nature in a shady place. We made it into a pie and gave the neighbor a big piece too! The last winter pie for this year. The last yellow pumpkin for this year.
I share with you one of my favorite pies. Sweet and salty at the same time. But definitely a pie for food. It contains the traditional sour frumenty -trachana elsewhere- of Crete, the land of my ancestors and whose taste accompanies me since I was a child. The rest of the ingredients are crushed vermicelli, which becomes invisible after baking, Greek feta, but also eggs and milk and plenty of dried onion and of course olive oil, from our production Cretan olive oil.

Back to basics: Greek Style Spaghetti with Meat Sauce!
In our Kitchens it was for years the dominant and almost the only dish of pasta with minced, made in another era by the grandmothers and mothers cooks of the house on demand young children & adults alike. It has nothing to do with the well-known sauce bolognese , with its many ingredients and long preparation, which arrived much later in our Kitchen along with some other famous Italian spaghetti or pasta. Another peculiarity of Greek Spaghetti is that it is served with pasta well cooked in contrast to al-dente but also with its few ingredients, which were in our poor homes.
The Spaghetti with Minced Meat of mom, with minimal ingredients and an incomparable taste! Minced meat seasoned with cinnamon & simmer to soften and mash nicely to include the spaghetti and flavor them. The grated mizithra or kefalotyri or grated parmesan, added on top, will take off its taste! This Greek dish has become a staple and a favorite in our home.

Cook the mussels in a large frying pan, with the tomatoes cut into small bites, the sweet red pepper in thin strips and all other vegetables chopped! Quench with white wine while your linguine are cooked in another pot. Combine the two and toss them with your favorite spices, a little grated Parmigiano-Reggiano & chopped rosemary. Now pretend you're on vacation on the Italian coast or on one of our Aegean islands and enjoy excellent flavors!

I do not de-bitter Aubergines for many years. I think this process is not necessary and taste is not improving. The truth is that over time the varieties have changed, de-bitter would be much more important than it is now. Salt helps aubergines to eliminate their metallic taste, as well as part of their juices and nothing beyond that. It is more important to choose from the market aubergines without many spores, which are tasteless and hard and change their taste.

Just 350-400 calories -at most- have a portion of them, while breathing a hot pizza special you get 875! So do not listen to others' prejudices, cook this vegetable and enjoy it. We did not eat so much food as the taste buds of the palate dared to try and revise.
The process for their preparation, when okra is fresh, it is a little time-consuming, but this contributes to their delicacy and differentiates them from the frozen.
