Lemony Cream Cake!

Lemony Cream Cake!
This creamy Cake/Layered Cake, which is wonderfully fluffy and musky scented lemon, filled with traditional goat yogurt combined with Katiki Domokou (ricotta), gave us pleasant tasting -but also festive- moments.
The lemony cream inside, with intense acidic tones, is sandwiched between 2 layers of crumbly dough mixture, which makes it very special and wonderfully delicious. The almond fillet enhances its taste and appearance. It is barely sweet because this is our choice, so we accompany it with a sweet red wine.
We liked it doubly because we had in mind to enjoy it during the holidays and so we named it "Birthday Cake" in honor of the birthday person...
Yours!

Yogurt Hazelnut Cake

Yogurt Hazelnut Cake
Velvety and fragrant this cake, with traditional yogurt and hazelnut flour, is a thin, without much sugar but very soft dessert, ideal for breakfast and snacks. It has a beautiful dark color from the hazelnuts and the intensity of their taste. Greek traditional yogurt makes it particularly fresh and tastes good. If you then sprinkle it with icing sugar, it will also be perfect at the end of a meal combined with a wonderful aromatic coffee. Children will love it and it is ideal to consume dairy products without even realizing it.

Almond Pie-Birthday Cake

Almond Pie-Birthday Cake
Cake with Almonds, syrupy and flavored with liqueur. Whitened & grated almonds make this almond pie very tasty. The syrup at the end (and in the right amount) flavors it wonderfully and makes it tender, soft and delicious.
We made it a Cake / Birthday Cake because… because we like it that way… and to simplify the procedures we sprinkled it with a little icing sugar. Alternatively we can put almond slivers on top or just grated almonds.

Yogurt Apple Cake

Yogurt Apple Cake
Mother was, is and will be special to the child, the teenager, the adult and today is nothing more than an opportunity to honor her and show her how much we love her.
Mother, mother, mom. Three words that enclose respect, beauty, tenderness, love and are always the most important presence in human life. An insurmountable bond that was praised more than any other, the mother was the source of inspiration for thousands of artists.
In the first verses of a poem dedicated to the mother we read:
  • «I was awakened at dawn by an aura, a breath,
  • on the cheek fluttered my mother's kiss
  • Her caress filled me with love and affection
  • and back I became a child again.
  • With a kiss and a wish and her smile,
  • As soon as I woke up I saw my sun on her face »…

Greek Brioche-Easter 2020

Greek Brioche-Easter 2020
Our Easter Tsourekia of 2020 was a beautiful experience, although their process was time consuming. We kept great waiting times for a total of 5 inflatables and which time (and inflatables) worked positively and substantially to make them fluffy, with strings and delicious buns.
Their ingredients are the classic for Tsourekia of our Greek Easter Brioche in a more enhanced dose, since 1 kg of flour was required.
Despite the long process, the hand work was very little. The dough, a perfect dough in texture and aroma also gave a perfect final result, which justified the effort and noise of the thing… But it is these family Easter traditions that create inextricable links and tasteful memories that connect us as a family, as a Nation.

We wish you a Happy Easter, with a lot of strength, so that we can face an invisible enemy who changed our lives!

Dark Chocolate Whiskey Cake

Dark Chocolate Whiskey Cake
Dark Chocolate Cake with a lot of Whiskey, a lot of Cocoa, a lot of Nescafé and a strong ground cloves aroma, is perfect for any occasion! Sure, Chocolate has many friends and is a magical and adorable ingredient.

Chocolate is the main ingredient in Cocoa, which comes from the cocoa tree and is one of the main ingredients in pastry, in sweets, ice creams, cookies and other containing sugar. Chocolate is also called hot chocolate (decoction) based on chocolate. The one who brought cocoa to Europe was Hernando Cortez.

The Aztecs used the cocoa beans -first they crushed them and made them powder- to make a drink called «Choclatl». This drink, along with other spices, made it hot and considered it to be digestive, potent, and the best medicine of its time, which could cure any illness.

For the first time solid chocolate was produced by London's traditional coffee shop «The Mill of Coffee», which in 1674 introduced chocolate bars «a la Spanish» and a chocolate cake in solid form.

Lemon Cake with Spoon Sweet

Lemon Cake with Spoon Sweet
Juicy and particularly fluffy, slightly sweet, with intense flavors of lemon and yogurt. The sour cherry spoon sweet came into the cake but also adorned it externally, placing it around the top like a crown of precious gems.
If traditional Greek spoon sweets are so popular that your cabinets and kitchen cabinets overflow, it's time to put them in cakes or other sweet treats so you can enjoy them in another dimension - in the role of a coworker rather than a protagonist - and at the same time create room in the cellar for your next sweet or savory creations in beautiful jars…

Vasilopita/New Year's Cake 2020!

Vasilopita/New Year's Cake 2020!
Ritual & Symbols
Vasilopita {Greek:Βασιλόπιτα, Vasilópita (St.Basil-pie)} is a New Year's Day bread or cake in Greece and many other areas in Eastern & Wester Europe and the Balkans which contains a hidden coin or trinket which gives good luck to the receiver. It is associated with Saint Basil's day, January 1, in most of Greece, but in some regions, the traditions surrounding a cake with a hidden coin are attached to Epiphany or to Christmas.
On New Year's Day families cut the Vasilopita to bless the house and bring good luck for the new year. This is usually done at midnight on New Year's Eve. A coin is hidden in the bread by slipping it into the dough before baking.
At midnight the sign of the cross is etched with a knife across the cake. A piece of cake is sliced for each member of the family and any visitors present at the time, by order of age from eldest to youngest. Depending on local and family traditions, slices are cut for various symbolic people or groups.
They may include the Lord, St. Basil and other saints, the poor, the household, or the Kalikantzaroi.
In older times, the coin often was a valuable one, such as a gold sovereign. Nowadays there is often a prearranged gift, money, or otherwise, to be given to the coin recipient.
The traditions surrounding Vasilopita are very similar to Western European celebrations of the Twelfth Night & Epiphany: the King Cake (Gâteau des Rois) of France and Louisiana and the Tortell in Catalonia.

Christmas Apple Cake with Yogurt Glaze!

Christmas Apple Cake with Yogurt Glaze!
Christmas and festive - that's why we like it - fluffy and light Apple Cake, not butter but with olive oil. Covered with a very special glaze, made from the same ingredients as this Apple Cake. It keeps it fresh and gives it a pale white veil through which the currants appear as small black splashes.
Although winter has been mild enough for us so far, the heaviest Winter is out of our reach. So it requires simple but well-balanced foods and pastries. Today's proposal is one of them and we suggest you try it…

Honey Banana Upside-Down Cake

Honey Banana Upside-Down Cake
We know the traditional version of the upside-down cake in which he wants to star in the pineapple, which is always particularly impressive even when cooked & cut. Bananas, on the contrary, do not have such a "shine", but cutting them down and placing them in a row on the base of a refractory pot in honey can become just as attractive and beautiful. My opinion? Another taste, with the presence of honey!
Finally, after the inversion, where things get upside down, the thick honey syrup bathes the entire cake. Let the cake cool completely so the honey caramel can set up enough. Don't be impatient like we were. Yours! Yours!

Classic Vanilla Bundt Cake

Classic Vanilla Bundt Cake
Vanilla Cake & Chocolate, a real Bundt Cake robust, solid, tough, heavy, liquid cake that has nothing to do with fluffy, airy, ethereal cakes, but it is wonderful and you will allow me, for excitement, to offer you with many praises.
Delicate, infused, and tender, this golden cake is simple. Baked in a Bundt pan is just as good to serve with fresh fruit, ice cream, whatever you like or just itself, sprinkled with powdered sugar as much as you like.

PS. If you like you can make it like a Santa Claus Christmas Cake. Remove the cocoa and place it in a flat, round shape pan.🎄

One Pot Chocolate Cake

One Pot Chocolate Cake
It's been already 14 years since it was published here for the first time this boiled cake or casserole cake, as is often said. It saw the light under the title: "Chocolate Cake, Juicy" and excited those who they enjoyed the 1st book of the Kitchen Stories «Desserts».
Today we suggest another similar version of the same cake, reinforced with some modifications/improvements through the experience and knowledge of so many years, with the addition of strong coffee in its highly chocolate syrup from the presence of cocoa and roasted hazelnut in serving, which is so perfectly combined with chocolate. It became an incredibly fluffy & juicy chocolate cake -a foam cake- perfectly soaked with cocoa syrup, similar to the previous you so loved!
Follow the detailed steps of preparing it and discover the little secrets that distinguish it from the package of similar proposals.

Fresh Peach & Black Grape Upside-Down Cake

Fresh Peach & Black Grape Upside-Down Cake
When you're dealing with prime, fresh, excellent, seasonal ingredients, the sentiment that simple is best almost always rings true. Knowing that June is the peak of Peach season for the Northern Hemisphere, what better ingredient for a simple, yet impressive dessert.
Fresh, summer, dessert & juicy peaches give us the opportunity to enjoy them in many ways, primarily in sweet desserts but in savory tastes too, in drinks & smoothies or in compotes.
The cake is baked low and slowly for about 40 minutes until the surface becomes red-gold and sliced peaches inside softened and caramelized from the addition of the sweet Black Grape but also from brown sugar and butter. The cake itself has absorbed all the sweetness of the candy. The aroma from the oven while the cake is baked is heavenly, with sweet vanilla and syrupy caramel peaches. The only downside to this summer's upside-down cake is that you must share it…

Simple Apple Cake

Apple Cake
Fruit is an important supplement to our daily diet. Many times they are replacing a whole meal and for us it has become a favorite habitat for their consumption. Some of these become cakes, since it is an easy batter, with short and simple procedures, made without the need to use a mixer and we enjoy it with family and small.
Apples are made in many different ways, added to sweet or savory delicacies. Golden Delicious apples were used in this fragrant Apple Cake and are the finest in taste that we can enjoy; however, it has the intensity and character of being soft and tender thanks to the apples and the addition of olive oil in the batter as well as a little yeast along with the baking powder. You will definitely enjoy it until the last crumb.

Blood Orange Olive Oil Cake

Blood Orange Olive Oil Cake
There are cakes that can be made without the need for a food processor or mixer. This cake is one of them. The whole process is done in a bowl and just stirring its ingredients, so without time-consuming preparations and without many tools. The result is a very fluffy, moist and beautiful cake that is not easily crumbled.
The recipe inspired by extra virgin olive oil, this year for the first time, gave us our new, small olives of organic farming.
The Sanguines (Blood Oranges) were used for their many beneficial properties but also for their color, that of ruby. Whole Sanguines, peeled and finely chopped, which left on the sliced slices of ruby & orange dots. It is an excellent cake in which the caramelized slices of oranges dominate with their presence and make it special, unique, festive.

Vasilopita Brioche 2018

Vasilopita Brioche 2018
It is always an excellent idea to welcome the New Year with delicious homemade savory and sweet dishes. As for the more traditional sweet, Vassilopita, it can be made in various shapes and ingredients for all tastes. Everything is just as delicious and they belong to the Christmas period of Greece. Prepare your Vassilopita sweet or savory - because there is this version in many of our areas - and bake it to beautify the house "feast!". Regardless of the taste you prefer best, do not forget to hide a coin inside!
Vassilopita without coin is not done.
This beloved version of Vassilopita Tsoureki is an easy and light-to-mouth version of traditional brioche. Our own was made with the new olive oil from our own olives, which just arrived at our house from the olive press. He was kneaded in Vassilopita and the satisfaction was great.

Happy New Year 2018!
