With many variations, different ingredients, a different way of serving and many different names, pies are a characteristic traditional delicacy in every corner of our country. Savory or sweet, with or without foil, round, triangular, simple or complex, traditional pies are a big chapter in Greek Gastronomy.

Besides the variations in the sheet - fresh handmade sheet or ready-made sheet or even without a sheet - there is a wide variety of sheets, some thin and transparent and others thicker. Some pies are prepared with several layers of sheets in the pan and a mixture is thrown inside them, such as spinach, cheese, various greens or vegetables. The variety of pie filling has no limits. You only need your imagination and the pure and fresh ingredients of each place. In addition to the classic pie with cheese or greens, you can put meat, sausages, vegetables, frumenty, pasta and whatever else you want in the filling!

Ham Cheese Pie with Cream
Everyone likes this pie, I always make it with a puff pastry sheet to keep all the delicious, soft and fluffy filling inside. A sheet at the bottom, a sheet at the top and in between a filling based on a light béchamel cream, made with corn flour and which makes it look like a millefeuille.
We choose plenty of favorite cheeses & hams. I chose to put smoked turkey fillet but also any other ham, that you like, does to make it delicious. Make holes in the puff pastry to remove the moisture inside the pie and not to wipe the sheet, so that it becomes crispy.

The Simiti, the Greek Sesame Bagel is a very favorite bakery which is found as the ultimate in outdoor snack carts in the streets of Athens and beyond. A unique street food, loaded with as many memories as everyone carries.
With a simple yeast dough without milk and eggs, it is so fast and very tasty. We make these golden rings immersed first in molasses and then sprinkled with plenty of sesame seeds to take off deliciously.
They are done plump, double simiti and very fluffy. They are eaten accompanied with a classic feta cheese meze, caper, olives & tomato, all sprinkled with oregano. They are also cut horizontally and filled with what we like, like a sandwich.
Make your own simiti by yourself is much easier than you think.

They are flavored with oriental spices but also with Chios mastic and their aromas resemble those of Easter Tsoureki. They are ideally suited to our coffee and we certainly have more than one.
Daktylies is a type of long shaped-bread, which is separated into smaller parallel pieces, in order to be cut off easier and evenly. The ingredients used for daktylies are flour, leaven, water, sesame seeds and aniseed. Many housewives in the countryside continue the tradition and bake daktylies for the needs of the family.

These cute cheese pies, with beautiful yoghurt dough, are done as easily as we can not imagine. The process is time-consuming but straightforward thanks to the yoghurt dough, which gives us supple, velvety, trouble-free management and good results dough.
These pies are great, even with various or different stuffings οn the table, buffet and healthy snacks at school and at work because even cold is still irresistible, delicious, crisp and very special. I usually almost always add turmeric to the stuffing, whatever it is. Add it to your diet, it's worth it!

In some areas of Crete, these Skaltsounia are named Patoutha (Τα Πατούδα), with various fillings, and besides dusting with icing sugar, they are also made with syrup. A mouthful delight for the palate and a sweet lenten for every season.
The Lenten «Skaltsounia» are traditional in many parts of Greece with various fillings but also in the Balkan Countries. And also the neighbors Italians make something similar with nuts and dried fruit or jam or chocolate. «They are named «Ravioli Dolci».

Molasses is a thick syrup, which is made by boiling the grape must. Kept unchanged for a long time and with this we make various sweet dishes, jelly, must cookies etc. It can also be added as a unique addition to grilled on the oven to salads and other sweets.
The Moustalevria is a simple dessert that comes from our ancient past to sweeten our present. Added Mavrodafne for exhilarating touch and taste intensity.

It's a traditional Greek pastry, whose main ingredient is the grape must. Its roots date back jelly in ancient times where it was known as oinouta a name that survived into the Byzantine period along with other names such as moustopita and pastellos. In Crete, referred to as kefteria, in Samos as Kourkouta or treat the vintage while in Cyprus Palouzes. Ancient sweet, which enjoyed not only by Dionysus, but also by ordinary people. Moreover how could it be otherwise, when around the numerous vineyards cried the voices of the harvesters and presses the grapes become must and mutate into wine and its derivatives.
