Mini Apple Cake

Ingredients (10 servings)

  • 125g (4.4 oz) butter
  • 125g (4.4 oz) sugar
  • 2 eggs
  • 175g (6.2 oz) self-raising flour
  • 1 tbsp baking powder
  • 1 tbsp vanilla extract
  • 50g (1.8 oz) dried cranberries, raisins or chocolate chips
  • 150g (1, 5.3 oz) apple
  • some icing sugar for dusting
Grease a small stick form, so that it will be ready. Peel and cut the apple into small pieces. Leave aside for a moment.

In the bowl of mixer you half melt the butter, add the sugar and beat together in the mixer for 5 mins until you have a fluffy cream.
Pour one to one the eggs to the butter-sugar mixture and beat well after each addition, until incorporated.
Mix the flour with the baking powder and add to the sifted mixture. Stir gently with a spatula.
Add the vanilla, cranberries and pieces of apple. Stir some more and pour the mixture into the form of the oven.
Bake in preheated oven with air at 160°C (320°F, Gas 3) for 30 minutes in the last rack of the oven.
Remove the form from the oven, allow 10 minutes on a rack to cool and take out of the form to cool completely.
Optionally sprinkle with icing sugar.
