Mini apple cakes, fluffy, silky and a fresh texture, juicy thanks to apple and our favorite cranberries.
It is made quickly and accompanies with its distinctive flavor presence, our breakfast.

Ingredients (10 servings)
125 gr (4.4 oz) butter
125 gr (4.4 oz) sugar
2 eggs
175 gr (6.2 oz) self raisng flour
1 tbsp baking powder
1 tbsp vanilla extract
50 gr (1.8 oz) dried cranberries, raisins or chocolate chips
150 gr (∼1, 5.3 oz) apple
some icing sugar for dusting
Grease a small stick form, so that it will be ready. Peel and cut the apple into small pieces. Leave aside for a moment.
In the bowl of mixer you half melt the butter, add the sugar and beat together in the mixer for 5 mins until you have a fluffy cream.
Pour one to one the eggs to the butter-sugar mixture and beat well after each addition, until incorporated.
Mix the flour with the baking powder and add to the sifted mixture. Stir gently with a spatula.
Add the vanilla, cranberries and pieces of apple. Stir some more and pour the mixture into the form of the oven.
Bake in preheated oven with air at 160°C (320°F, Gas 3) for 30 minutes in the last rack of the oven.
Remove the form from the oven, allow 10 minutes on a rack to cool and take out of the form to cool completely.
Optionally sprinkle with icing sugar.
