Pork Shank in the Pressure Cooker
The shank is a very tasty chunk of meat and is delicious when cooked with herbs and mustard.
In the pressure cooker, remains soft and juicy and most importantly it becomes very fast with less power consumption.
In finally the delicious sauce, with all the juices of the meat and spices, gives the shank and the accompanying rice, an extra tasty treat.

Pork Shank in the Pressure Cooker

Ingredients (2 servings)

  • 1 pork shank ∼800g (1.8lbs)
  • 1 tbsp fresh butter
  • 50ml (1.7floz) olive oil
  • 1 sprig, fresh rosemary
  • 1 sprig, fresh thyme
  • 1 lemon juice and zest
  • 1 tbsp mustard Dijon
  • 1 tsp ginger powder
  • 1 tsp paprika (sweet)
  • 1 tsp oregano
  • salt & pepper
  • 1 tsp cornflour
Take the lemon zest, add small parts of thyme and rosemary and mix everything together.
Leave them aside for a while.
Put the olive oil and butter in the pressure cooker and heat them up. Sauté the pork shank well from all sides to brown nicely everywhere.
Drizzle with lemon juice…
… and add the mixture of oregano, paprika, ginger. Add salt and pepper.
Mix in 250 ml (8.5 floz) of lukewarm water into which we dissolve the mustard and seal the pressure cooker.
At 15'-20' we check and turn the shank on the other side.
Continue cooking for another 15′ or as much as needed to cook the food and being left with enough sauce.
Remove the meat from the pressure cooker, drain in a colander, the sauce in a saucepan…
… add the cornflour and boil 2'-3'.
Fill the sauce boat and pour over the shank.
Served sliced, with aromatic basmati rice, topped with savory sauce of food.
Of course we have the option to escort potatoes or vegetables instead of rice.
