Ancient Greeks attributed prices to Rhea every spring, as she was goddess of land and fertility».

The Greek Simiti / Koulouri
The Simiti, the Greek Sesame Bagel is a very favorite bakery which is found as the ultimate in outdoor snack carts in the streets of Athens and beyond. A unique street food, loaded with as many memories as everyone carries.
With a simple yeast dough without milk and eggs, it is so fast and very tasty. We make these golden rings immersed first in molasses and then sprinkled with plenty of sesame seeds to take off deliciously.
They are done plump, double simiti and very fluffy. They are eaten accompanied with a classic feta cheese meze, caper, olives & tomato, all sprinkled with oregano. They are also cut horizontally and filled with what we like, like a sandwich.
Make your own simiti by yourself is much easier than you think.

This is one of my favorites autumnal desserts. With a puff pastry sheet and a few nice fruits we have in a short time a delicious & aromatic caramel dessert.
Tarte Tatin is traditionally made with apples without excluding the other fruits if we want to get away from the mundane. A Tart with rounded, whole caramel pears, flavored with 9 spices is a super-tasting, smell-like suggestion. The puff pastry leaf is impregnated with the flavored caramel and becomes crisp and delicious.
If you it want to become even more fancy, accompany it with ice cream but you should know that the Anglo-Saxons combine it with the simple classic cream and it is extremely good and has the virtue of simplicity. We added extra roasted & grated almond and enjoyed it pleasantly.

Spinach, Mushrooms & Feta Quiche
When I make a tart of fresh vegetables, mixed with other different ingredients, I try to guess what its taste will be in the final result. How much the ingredients have blended together and how balanced their proportions are in salt & spices. And as always, I add something extra to correct the taste of bringing it to my palate worries. This time I chose to replace a simple black pepper with the four peppers with the coriander from the infinite jars of my kitchen. Wonderful aromas, delicate peppery smells, all combined with refinement…
The puff pastry leaf, deliciously crunchy, closed everything I prepared for an hour. I cut ribbons from the dough sheet that was left over for the final & defining layer on its face, creating my own galaxy spiral centered on a star, my family enjoyed it and I received extra kiss, it was the first of May you see!
