A very fluffy cake, very special without many eggs, with yogurt and olive oil. It is one of the cakes that have the name "Sponge Cake" (without referring to the well-known sponge cake, which has other ingredients and a different way of making it), for the reason that it is really so soft & fluffy.
On its surface is added extra yogurt and jam - any jam we like - which, by stirring them lightly with a toothpick, partially sinks into the interior of the cake during baking and makes it delicious and moist. Try this easy & perfectly fluffy cake.

Crostata without Butter with Ricotta & Peach Jam

Crostata without Butter with Ricotta & Peach Jam
I wanted to try this type of dough, which contains light oil instead of butter. Although not really an Orthodox preparation compared to the rules of pastry, it is a great and easy way to make a dough very quickly. Mix everything in a bowl, work with the wire or spoon and then finish the process with a quick kneading on the kitchen work surface.
This shortens the time needed to make a sweet tart dough, as it does not need to rest in the fridge and can be used immediately even when there are a hundred degrees in the house due to the summer heat.
We open a sheet of handmade dough that is easily inserted into the tart dish, fills up and at one point we have our tart ready to get into the oven.
Sweet Tart without butter, filled with anthotyro -ricotta cheese- & Peach Jam, made by us in a very short time and with less sugar. Light Peach Jam recipe at the end of the article. The dough sheet is so wonderful, with biscuit texture, crumbly, that it will surprise you with its taste and texture. It can also be used in savory tarts by removing sugar.

Spring is here, the days will grow longer and we will see flowers blossom everywhere. This in itself is a good reason to smile more than this cake shows us how.
Let's dream of blue sky, tiny green buds that appear on the branches to transform into fresh, colorful flowers and in many places have already felt their presence.

To welcome the change of season with open arms, we created a white cake for the coming of Spring with freshly edible flowers with fluffy sponge cake filled with strawberries, and an easy, soft, lightweight, without too much sugar coating. We choose from the following list which edible flowers we can use (a little or a lot) and decorate this cake, a "joy of God" cake, a whole garden with optimistic messages and joyful looks to make our mood, but also a festive only for festive joyful events we prepare cakes, so it is not;

Light cool dessert. It is made so easily and gives pleasure with few calories. Share it generously, it costs very little and is done in very little time. The fragrant and light Mahallebi cream is the predominant flavor.
This sweet is a tender memory of Mom's preparations and it has always been served on her own mom's vintage saucers. Three generations coexist over a simple yet so beloved refrigerator sweet.
The blue representations on the white of the dishes, with a romantic figure of two lovers in front of a beautiful house in the countryside, magnify my gaze perhaps more than that sweet!

Staying to recollect trips and wanderings, which year after year dwindle, I did not fail to bring in my memory and in our Kitchen, Tuscany, narrating another culinary history, making crostini with crispy bread, fresh goat cheese, fresh figs, strawberry jam, and exquisite prosciutto, all sprinkled like fine rain with the unique balsamico di Modena!
A bold savory-sweety combination of ingredients, scents, flavors & textures that will travel us and that our taste buds will keep it for a long time… forever I would dare say.

Apple Strudel
Although the contenders of its origin are the Austrians and Germans it does not concern us here, since pretty much all Central Europe and the Balkans have to show similar "pies" in roll form and fruit inside. Infinite variations but the combination of thin, crisp phyllo pastry sheet in layered form of the roll and the soft, sweet fruit inside is the winner of taste.
Wonderful aromas, mild acidic flavors, sweet surprises from the presence of the jam & raisins and very crispy phyllo pastry sheet make this dessert excellent. The almond ground offers refined tones on the palate.

Sweet & Spicy Apple Chutney
Chutney or Chatni is a sauce/spicy jam from Kitchens of India, which can vary… One offshoot has rooted in Anglo-Indian cuisine to gain even as many variations and adapt to another flavor culture.
It is usually with vegetables and fruits, such as onion, garlic, rhubarb, apples, peaches, orange, plum, etc. with which one can make a milder pickle. Add vinegar or apple cider vinegar in recipes of Chutney English style, aimed traditionally give long life, so as to maintain for use throughout the year. Brown or dark sugar (usually Demerara to replace the jaggery in some Indian sweet chutney) and spices, which are usually used, fenugreek, coriander, cumin, cinnamon.
The whole produces a sweet and spicy pickle, with sweet and fruity flavors, with a strong presence of ginger, but a softer product, which in Western Kitchen is built to accompany savory dishes. Usually eaten with Cheddar cheeses or cured meats and poultry, usually in cold meals a pub.

Almond Tart
Almond Tart with orange aromas. With grated base dough -Pâte Sablée- kneaded with poppy seeds. The aromatic stuffing of the tart has two layers. A first, thin, with apricot jam and a second with almond cream, made with blanched ground almonds, butter, orange zest, cherry brandy, eggs and sprinkled in the surface with almond slivers.
Refined, delicate, light, almost ethereal flavors, that only almonds can give us.

Cheese Mousse with Lingonberries
Lingonberry is a native plant that forms a bush in Scandinavia with edible, red, small fruits and has a far history in Nordic cuisine, which uses them in many dishes, fresh or frozen.
Jam with lingon-lingonberry jam, in the form of canned we knew and loved through the «IKEA», where served escorting the Swedish meatballs and where you can purchase it.
Here it was used as a base to place on it a fluffy mousse mascarpone cheese cream, cool, mild in sweetness thanks to stevia and very light taste.

Mini Doughnuts
Cute, tasty, tiny, fluffy and compelling for our little friends and not only. Filled with fragrant homemade jam become like a mouthful dougnut!
They have not a lot, bready taste like large donuts even though more … consumable! The cream in the dough and the stuffing with jam of your choice makes them tempting. Eaten lukewarm but after that they were fine.

Rosettes of meringue crispy outside and fluffy and soft inside, covered with a delicious strawberry cream. Easy for one individual sweet, perfect for a quick fix without missing flavor and color.
The meringues are made from egg white, in different sizes and colors, and baked in the oven. They offered me here, ready, painted with these lovely pastel shades, so I chose to propose to you only with a light, sour cream strawberry and a little apricot jam.

Blueberry Marmalade Cake
Tasteful, dark blue blueberry jam, dried cranberries and a small cake with condensed presence and benefits of antioxidants.
The cake with the addition of blueberry jam has a completely different taste and texture than simply add fresh blueberries in mixture of the cake. The cake is sweeter, juicier and slightly sticky. Tastes good and this is small in volume for quick consumption.

Petit Fours or small cakes, filled with jam and aromatic cocoa glaze!
A delicious, juicy and flat cake, which will not crumble, is the appropriate basis to make these little sweets almost a mouthful, after having to cut into small cubes, to cut again the cubes for filling with jam. Process as simple game.
The cocoa glaze is easy and even though it does not have the taste of chocolate tones, but equally captivating in my opinion, it has the cocoa flavor, that chocolate is a bit more "grumpy" in preparation and its use in relation to cocoa.

Cherry marmelade light, easy and fast. Enjoyable without the excess sugar and of course less burdensome nutritionally. The orange zest adds flavor and needed pectin.
The wonderful cherries with glossy skin and tight flesh, but with wonderful color and taste, sealed in jars and stored to accompany us in winter.

Strawberry Jam
Easy, fast and light strawberry jam, enhanced with a shot of brandy and lemon juice, which helps to maintain the bright color. Its sugar content is low, which makes it particularly dietary and with more fruit in its composition. Almost 80%! Ten minutes of boiling is enough for strawberries to retain all their vitamins and trace elements. With longer boiling, all of this is lost.
