The large round and aromatic plum fruits are called vanilla. Succulent fruits with beautiful dark blue-mauve color, have a sweet taste and excellent aroma. They are a good source of vitamins A & C and are high in fiber and highest antioxidant capacity. Suitable for cakes, sweet tarts, jams, compote and juice.
Here they are used in a leading role to become a very juicy and moist cake with a peppery aftertaste, seductive colors and flavors, which give the warm spices such as cinnamon, ginger, cloves and the pepper.
As it is baked the house is flooded with rich aromas of spices and fruit.

Ingredients (12 pieces)

  • 6-7 plums
  • 100g (3.5oz) butter in room temperature
  • 180g (6.3oz) sugar
  • 50g (1.8oz) vegetable oil (corn oil)
  • 5 medium eggs
  • 1 tsp vanilla extract
  • 250g (8.8oz) self raising flour
  • 1 tsp baking powder
  • ¼ tsp salt

Dry Mixture

  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • ½ tsp cloves
  • ½ tsp ginger
  • ¼ tsp black pepper
Wash and cut the vanillas into small bite size pieces.
In a small bowl add all the above ingredients, mix well and set aside for a while.
In a large bowl, add the butter and sugar. Beat well with hand mixer 3'-4' and during the beating add the light oil in a very thin stream. There will be a white cream. Add the vanilla extract and beat for very little.
In a separate bowl, lightly beat the eggs and add to the butter / sugar mixture. Beat for too little. Do not exaggerate the beating, just to unite the ingredients.
Finally add in 3 portions flour, sifted, into which you have put the baking powder and salt.
Let the beaters aside and gently stir with a plastic spatula just to incorporate the flour with the other ingredients of the mixture.
Butter and invest with greaseproof paper an oblong form dimensions 30×11cm (11.8×4.3 in). Within the form, add a little more than half of the cake mixture.
From above immerse half pieces plums and sprinkle with half the mixture of spices.
Add the remaining whipped mixture of the cake and from the top immerse the remaining plums.
Sprinkle with the remaining mixture of spices.
Bake in a preheated oven at resistors 170℃ (338℉, Gas:3.5) for 1 hour and 10'. Test with a wooden skewer that should come out clean.
Remove from the oven and let it cool. If you want to ice with a mixture of 2 tablespoons of lemon juice and icing sugar as much take to make a thick glaze that flows.
With this you ice the cake surface.
