Cook the mussels in a large frying pan, with the tomatoes cut into small bites, the sweet red pepper in thin strips and all other vegetables chopped! Quench with white wine while your linguine are cooked in another pot. Combine the two and toss them with your favorite spices, a little grated Parmigiano-Reggiano & chopped rosemary. Fresh Lemon Syrup

Fresh Lemon Syrup
Whether you find standard lemons from the market or the supermarket or -even better- from your own organically grown lemon trees, take their juice and do not throw away the lemon shells but make this raw, fresh lemon syrup for many uses.
You fill a transparent glass bottle with this syrup, made of nothing but sugar dissolved in the acidic lemon pulp and no boiling is required! Since there is no extra juice, it tastes somewhat sweeter than sour but is balanced by the fine bitterness of lemon.
The lemon shells are acidic enough to dissolve up to half their weight in sugar, giving the syrup a strong flavor and vivid color without any additional juice, flavor or dye.
Use it in various dishes in your kitchen from a simple liqueur with ice cubes and soda, your favorite cocktails to cakes or where else you want to give strong lemonade flavor to your preparations.

Lemons and limes combine to create a fantastic flavor and a beautiful color and clarity to marmalade to the stretch onto our bread and biscuits or use it in other sweet concoctions in our Kitchen, as cakes, tartes, tortes, refrigerator sweets, sweet pies etc… At the time when lemons are in abundance we make and fill jams with lemon marmalade, where many of these become gifts for friends.
Lemons, high in pectin and acid, make a great marmalade although the actual flavor of fruit and its color varies.
We use only three ingredients to make this marmalade. Lemons, sugar and water. Without having to add pectin or other perfumes. Although the recipe is simple, it takes time to carry out, but the end result is worth it!

The process for their preparation, when okra is fresh, it is a little time-consuming, but this contributes to their delicacy and differentiates them from the frozen.

It is traditional, delicious and favorite food. It accepts interventions by adding other vegetables along with the green beans, creating more textures and flavors that take off.
We choose whatever variety of green beans we prefer as long as they are freshly cut, tender and crisp.
Of course this dish is strictly accompanied by Greek Feta.

The Greek Simiti / Koulouri
The Simiti, the Greek Sesame Bagel is a very favorite bakery which is found as the ultimate in outdoor snack carts in the streets of Athens and beyond. A unique street food, loaded with as many memories as everyone carries.
With a simple yeast dough without milk and eggs, it is so fast and very tasty. We make these golden rings immersed first in molasses and then sprinkled with plenty of sesame seeds to take off deliciously.
They are done plump, double simiti and very fluffy. They are eaten accompanied with a classic feta cheese meze, caper, olives & tomato, all sprinkled with oregano. They are also cut horizontally and filled with what we like, like a sandwich.
Make your own simiti by yourself is much easier than you think.

Koulourakia: Cypriot Easter Cookies
These Easter Cookies are traditional Cypriot Easter buns, which although Lenten are traditionally made on Good Friday.
They are flavored with oriental spices but also with Chios mastic and their aromas resemble those of Easter Tsoureki. They are ideally suited to our coffee and we certainly have more than one.
Daktylies is a type of long shaped-bread, which is separated into smaller parallel pieces, in order to be cut off easier and evenly. The ingredients used for daktylies are flour, leaven, water, sesame seeds and aniseed. Many housewives in the countryside continue the tradition and bake daktylies for the needs of the family.

Blood Orange Marmalade
These wonderful oranges, blood oranges, with red spots on the skin and red flesh, made marmalade and is one of the most beautiful in the red scarlet color, and perhaps the most delicious.
Since childhood I was magnetized and impressed by their blood-red flesh! In the grand orangery of the grandfather, there were almost all sorts of citrus -and various varieties for some of them- from citrus (κίτρα) for their essential oil, which exported to Marseilles, lemons & lime to oranges, mandarins & blood oranges. Everyone with different tastes and sweetness but so beneficial to our body. Since then I have loved these fruits and it was the season, though very young, I ate lemon cut at 4 and sprinkled with salt. From this magical world of our orange tree a part of it has come to my property, thanks to the generosity of the people who so fought with their land.

Broad Βeans & Blites Salad
We are going through a limp week, between an undecided spring and a summer that does not seem to have made a decision to settle. So adjusting our mood to the «big question of life»!?!: what do we eat today, we cook broad beans. A legume rather despised now and some may not even know of the existence of.
Broad Beans are eaten fresh with artichokes, peas, etc. But dry, boiled as a salad or liquor, here our case. Onions, fresh tomato, bay leaves and oregano make this dish scream out of enthusiasm. They are accompanied and eaten with a salad blitum, feta, olives and barley rusk.
