We are going through a limp week, between an undecided spring and a summer that does not seem to have made a decision to settle. So adjusting our mood to the «big question of life»!?!: what do we eat today, we cook broad beans. A legume rather despised now and some may not even know of the existence of.
Broad Beans are eaten fresh with artichokes, peas, etc. But dry, boiled as a salad or liquor, here our case. Onions, fresh tomato, bay leaves and oregano make this dish scream out of enthusiasm. They are accompanied and eaten with a salad blitum, feta, olives and barley rusk.

Ingredients (~4 servings)

  • 250g (8.8oz) broad beans, dried
  • 2 onions
  • 3 garlic cloves
  • 2 ripe tomatoes
  • ½ red pepper
  • 2 bay leaves
  • 1 hot peperoncino
  • 60g (2.1oz) olive oil
  • 1 sprig of fresh oregano
  • salt & pepper


From the evening, we soak the broad beans in plenty of water.
The next day, when they are swollen, remove the black eye with a knife and the peels from about half the beans. Leave the other half without peeling for more delicacy.
Boil them in enough water until they boil well and soften. The boiling time depends on the same beans and whether they are easy to cook.
In the meantime, prepare the sauce in which they will be cooked for a while, since they will already be boiled.
Clean, wash and cut the onions in a half-moons.
In a saucepan and on a medium heat add the olive oil, onions and garlic sliced. Allow to brown in a casserole, polish and golden.
Grate the tomatoes on the grater and add them to the pot along with the red pepper, bay leaves and peppercorn. Stir, pour some water and let the sauce boil.
Toward the end of the boil, add salt and pepper. Mix gently. Let's boil it all together for a while. If necessary, add some water.

Blites Salad

  • 500g (1.1 lbs) blites
  • 2 potatoes or/and a few zucchinis
  • garlic
  • lemon
  • olive oil
  • salt
Clean and wash the potatoes and blites, removing the hard parts of the stump and the damaged leaves. In a saucepan and in a strong fire we put water to boil. Pour the potatoes and blites and let them boil until they are softened. The blites need less boiling and you remove them from the pot earlier.
Put them, drained, into a salad with potatoes cut into pieces. Add garlic chopped, salt, lemon and oil.
