It is not a simple Cake, it is a festive, spicy and very aromatic cake. As you prepare it and its aromas flood your kitchen you will automatically have the desire, the mood to squeeze the carols, whatever Christmas carols come to your mind even if you are particularly dissonnant.
It is a cake with molasses, with sweets ginger and lots of spices, filled with the inside of it with fluffy cheese cream. Outwardly a candied sugar cloud is all it takes to let its perfumes overflow and disperse in our palate.

Our current proposal for Truffles coconut is gluten free and is a variation of previously published & already known recipe Coconut Truffles-Raffaello, that many of you have made and loved. These desserts are great, even with various or different stuffings in the table, buffet and healthy snacks at school and at work because even cold is still irresistible, delicious, crisp and very special. From eggplants, potatoes, pumpkins and naturally mature, reddish, vigorous tomatoes. Everything was used perfectly according to the wishes of everyone in the family.
The current proposal is with peppers only without excluding the remaining vegetables, if you like. The filling with minced meat and aromatic herbs also give a very tasty dish. They are made easy and fast since preparing to fill the peppers is not difficult or time-consuming.
We prepare them early in the morning to smell the kitchen flavors and aromas and until lunch time will have been cooked and will be quite lukewarm to enjoy them with feta cheese.

Although between us, with so many ingredients becomes easily main dish and consumed pleasantly.
One tip only: Fry the eggplants in too little oil and for very little. We do not want to absorb oil to spoil the freshness of this dish and to taste it.

The queen of our cakes and heart.
The decadent black forest torte is the epitome of chocolate, which puts it in the podium it deserves to bring out the true spirit of the dream of every confectioner. This fancy cake is laid out with so many fascinating stories about its origins, stories that traveled all over the globe, starting from the tranquility of the small town of Bad Godesberg, the suburban area of Bonn.

The Black Forest torte is made with lightweight, Genoese, chocolate sponge cake, impregnated with Kirsch (made from double distillation of cherry and sour cherry juices) and filled alternately with buttermilk and cherries, slightly marinated to keep their crisp texture. The culmination of all these is a cake sprinkled with cocoa, whole juicy cherries, black chocolate croissants and sugar snack to give royal style to the torte. It could be a calorie bomb but a slice of it can easily take you to the magical world of the chocolate black forest.

Tomatoes are the essence of summer and having the privilege of finding them easily on the benches of our markets or on our lawn, we can use them in a multitude of recipes.
For this recipe we need tomatoes that are at the peak of their maturity. Red, juicy, all together, small, medium, large, pizza-style in a puff pastry, sprinkled with the unique balsamic flavor, sprinkled with salt and a few fresh basil leaves. They come in the oven to brown for a while, so that they become crisp and crumbly at the same time.
You will like this tart, eaten as an appetizer but as your main dish too, with a green salad and cold beer.

This year our peach production was small. Some of these we enjoyed fresh and cool and some were made compote to keep them as long as we can and have them for various pastry preparations I had in my mind.
Basically the story behind this compote recipe was to make an ethereal blancmange (from the French blanc-manger). In retrospect, I realized the huge range of sweets, where we can use our hot or cold compotes. From the simplest dessert, such as on a velvety cream or yogurt, to something more complex, such as on or inside a fridge cake.
Today's suggestion is peach compote and jelly. Once the fruits have been prepared and made compost to become jelly it was the simplest dessert we could make and enjoy.

We meet the plants of Caper to grow freely in nature. It is a magical plant that grows in places full of sunshine and hot to very hot summer and in very poor soils almost without water. But it insists on being and giving its little flowers -her immature buds- to become the apple of the Communion among humans, birds and ants.
In order to make pickles, we collect, with respect to the plant, its flowers when they are small before they are blooming, its tender leaves and its fruits, and those small, tender, crisp, which are created after the flower is fertilized & inside There are the seeds of the plant.

So adjusting our mood to the "big question of life"!?: what we eat today, we cook broad beans. A legume rather despised now and some may not even know of the existence of.
Broad Beans are eaten fresh with artichokes, peas, etc. But dry, boiled as a salad or liquor, here our case. Onions, fresh tomato, bay leaves and oregano make this dish scream out of enthusiasm. They are accompanied and eaten with a salad blitum, feta, olives and barley rusk.

A traditional English cake that all we have to do is prepare a quick cake mix, stirring it gently, sinking cherries, with its pretty polka dot design and empty the mixture in an oven pan. It could not be simpler, no mixer, no blows, no long process, and fewer utensils for the sink.
It looks a lot like the french clafoutis, only the English in the classic form of cake use candied cherries. We preferred fresh cherries, which have already made their appearance on the market. I kept some for this and only the recipe because we love to eat them fresh.

Native, perennial aromatic, medicinal, industrial, excellent flavor and great bee-keeping plant, known since antiquity. Who do we know it fresh and blooming, how many have collected and dried it, how many we use it or how much it is unknown?
Rhetorical inquiries about the oregano in order to make an effort to approach the matter and see how we can harvest, drain or even cultivate -why not- our own oregano, not least the Greek village tomato salad with feta cheese and Oregano is our gourmet ambassador around the world!
And here I am going to tell you a secret… if you are near mountains, hills, and slopes go out and meet her. If you are urban, you can not have a balcony, a sunny window will be there, then cultivate your oregano and then everything else that smells like a oregano will never be yours anymore!
Its therapeutic properties, look for them and you will find, here today we learn to gather, dry it, scrub it to show its aromas and to put it in jars to taste our food and our mood!

The season of fresh leaves is in May and June, depending on which area we are talking about. Find and cut your own fresh spring vine leaves, the first ones that Greek vineyards make or buy ready-made cuts from your neighborhood and prepare them to get into your cupboards so you can use them at any time. And do not forget the best leaves are gathered when they are still tender only by the climates of the Sultanina variety or Debina variety.
The proposed method is simple and very easy. So packaged will be kept perfectly in your freezer.

No Knead Baguette

No Knead Baguette
In our home we are not much of the bread, not because we do not like it but we just agreed to somewhat reduce the consumption of certain carbohydrates, removing from our usual diet this divine creature, the BREAD.
As a family with French references we could not say no to a fluffy, freshly baked baguette and thus give us the opportunity to encroach the terms of the agreement.
So we made Baguettes with a lazy process and special garnish to remind Greece but also the Mediterranean, have oil and salt, olives & tomatoes, garlic & pepper and fragrant, much smell, like when you cross dawn off the oven and take the smell of hot bread just came out. Thus they were born, inflated and baked four small baguettes, effortlessly, without kneading!
We exercised maximum restraint and character not to consume instantly. They lasted two days and the second day they were equally delicious, fluffy, delicious and very fresh. There was not third day to tell you how it was… Build them, you will not regret.

We suggest simplicity. It is relatively aglycone is thin, is soft in taste and texture and the browned and crisp puff pastry.!
