Peppers Stuffed with Minced Meat
A delicious Stuffed Recipe over the established traditional, classic recipe made by our mothers and grandmothers, with whatever vegetables they had available or their bowl and including all the big vegetables that could empty their crumbs and filled with rice only, without minced meat, but always delicious and aromatic. From eggplants, potatoes, pumpkins and naturally mature, reddish, vigorous tomatoes. Everything was used perfectly according to the wishes of everyone in the family.
The current proposal is with peppers only without excluding the remaining vegetables, if you like. The filling with minced meat and aromatic herbs also give a very tasty dish. They are made easy and fast since preparing to fill the peppers is not difficult or time-consuming.
We prepare them early in the morning to smell the kitchen flavors and aromas and until lunch time will have been cooked and will be quite lukewarm to enjoy them with feta cheese.

Fresh Dip of Tzatziki

The traditional Greek Tzatziki is the most famous dish of Greek Cuisine and of our favorite summer dishes. Variations are also known throughout middle east.
The Fresh Dip of Tzatziki contains sheep's greek yoghurt and fresh cucumber grated. The refreshing taste makes it a perfect companion for a variety of dishes, such as roasted, fried or raw vegetables, various vegetable meatballs (tomato balls, zucchini fritters, κ.λπ.) stuffed vines leaves, grilled meat, oven french fries or baked stuffed vegetables, as well as a basic ingredient in our favorite Greek kebab or fresh bread.
The ultimate dominant in the accompanying and appetizers is the wonderful, intense and fresh taste, with very spicy presence of garlic to balance perfectly with velvet yogurt and herbs!

I called it spring because of the herbs that give it flavor and great taste. Hortopita: Greek Savory Pie with Greens, Herbs & Feta Cheese
An epic Savory Pie!
Delicious, hearty in a beautiful phyllo dough almost handmade.
The process is time consuming in particular the very good cleaning and washing, which are required for the preparation of many greens & aromatic plants & herbs.
The entire process can be done in two stages for convenience. Prepare the vegetables from the previous day, let them drain well all night and the next day continue to complete the pie.

The continuation and the end of the lengthy post "Phyllo Dough & Pies" is completed here. The little pies arrive at their final destination, when the fresh fried, thin pie -which smells Greece- reach to our palate!
After we learned to we make the dough, roll the sheet and we have become experts in "dough pastry sheets" today we will learn to choose, to cook, make pies and eat the noblest, aromatic, delicious, sweet and fragrant greens & herbs of all time, the whole world.
Are these the Greek Spring! Especially after a year with so much rain the greens and green covered up rocks…
Mediterranean hartwort, chevrils, poppies, spurges, sorrel, leeks, onions, dill, fennel, peppermint, nettles, sonchus oleraceus, commonly all those spices, wild, sweet, edible greens, we find this time in Greek land which when cooked become the ultimate nutritional and taste dimension.
Most of us do not recognize more than 3-4 species. The variety is great and it is not easy for someone who does not live close to nature to know their name, but also to distinguish edible from inedible. Many are found in outdoor public market and grocery stores. Wherever you find them, take them and go make pies.

Favorite pie, traditional pie, lenten pie, with delicious aromatic herbs of the Spring. Everyone likes it and gets eaten with an appetite.
The greens are in abundance in the wild to gather ourselves, or at the grocery store or farmer's market. Look for them.
The diversity and composition of the individual components may vary, but that it is always delicious. It can be made with ready phyllo for more convenience. Wrapped in a circle and forms a large snail. Baked in the oven to become crisp and browned.
