Crostata without Butter with Ricotta & Peach Jam
I wanted to try this type of dough, which contains light oil instead of butter. Although not really an Orthodox preparation compared to the rules of pastry, it is a great and easy way to make a dough very quickly. Mix everything in a bowl, work with the wire or spoon and then finish the process with a quick kneading on the kitchen work surface.
This shortens the time needed to make a sweet tart dough, as it does not need to rest in the fridge and can be used immediately even when there are a hundred degrees in the house due to the summer heat.
We open a sheet of handmade dough that is easily inserted into the tart dish, fills up and at one point we have our tart ready to get into the oven.
Sweet Tart without butter, filled with anthotyro -ricotta cheese- & Peach Jam, made by us in a very short time and with less sugar. Light Peach Jam recipe at the end of the article. The dough sheet is so wonderful, with biscuit texture, crumbly, that it will surprise you with its taste and texture. It can also be used in savory tarts by removing sugar.

Fresh Peach & Black Grape Upside-Down Cake
When you're dealing with prime, fresh, excellent, seasonal ingredients, the sentiment that simple is best almost always rings true. Knowing that June is the peak of Peach season for the Northern Hemisphere, what better ingredient for a simple, yet impressive dessert.
Fresh, summer, dessert & juicy peaches give us the opportunity to enjoy them in many ways, primarily in sweet desserts but in savory tastes too, in drinks & smoothies or in compotes.
The cake is baked low and slowly for about 40 minutes until the surface becomes red-gold and sliced peaches inside softened and caramelized from the addition of the sweet Black Grape but also from brown sugar and butter. The cake itself has absorbed all the sweetness of the candy. The aroma from the oven while the cake is baked is heavenly, with sweet vanilla and syrupy caramel peaches. This year our peach production was small. Some of these we enjoyed fresh and cool and some were made compote to keep them as long as we can and have them for various pastry preparations I had in my mind.
Basically the story behind this compote recipe was to make an ethereal blancmange (from the French blanc-manger). In retrospect, I realized the huge range of sweets, where we can use our hot or cold compotes. From the simplest dessert, such as on a velvety cream or yogurt, to something more complex, such as on or inside a fridge cake.
Today's suggestion is peach compote and jelly. Once the fruits have been prepared and made compote to become jelly it was the simplest dessert we could make and enjoy.

Farfalle (butterflies) or Bow-tie are alternative names for the pasta, with beautiful bow shape. Dated from the 16th century in Lombardy and Emilia-Romagna in Northern Italy.
Bows, therefore, accompanied by wispy shrimp, chopped green onion, chives, coriander, chilli and lime and Peach!
I think this dish is perhaps the tastiest and most aromatic of pasta dishes, that I have at times suggested from the pages of Kitchen Stories. Seductive aromas and tantalizing smells emerge and gives pungent taste superiority.
If the ingredients and the composition convinced you, make it and enjoy it with a cold, dry, white wine.
