Aromatic Pickled Caper
We meet the plants of Caper to grow freely in nature. It is a magical plant that grows in places full of sunshine and hot to very hot summers and in very poor soils almost without water. But it insists on being and giving its little flowers -her immature buds- to become the Golden Apple of Discord among humans, birds and ants.
In order to make pickles, we collect, with respect to the plant, its flowers when they are small before they are blooming, its tender leaves and its fruits, and those small, tender, crisp, which are created after the flower is fertilized & inside there are the seeds of the plant.

Fava beans are a legume and not so common in our daily meals. However, despite the strict austerity of its presence in our Kitchen Stories, it is considered to be one of the most delicious dishes of legumes that we honor most often.
Gentle, delicate flavor and velvety texture in cream form is eaten as an accompaniment to ouzo-wine but also as a main dish with olives, feta cheese, toasted slices of home bread and a glass of red wine.
Throughout Greece, we know as the famous products of the Greek motherland the delicious Prespes beans, Sifnos chickpeas, Amorgo fava beans, Skyros and the most famous of all of Santorini, where it is grown for hundreds of years. All legumes are an enormous nutritional value for a Mediterranean / Greek diet with many health benefits.

Pulses are known as the food of the people from ancient times. The proteins they contain may be substituted to some extent the animal proteins, necessary for human nutrition. The Black-eyed beans and lentils contain large amounts of iron.
The black-eyed salad is very easy and quick to make, since they do not need to be soaked for many hours like other legumes. Season with aromatic herbs and spring onion, garnish with black olives, Capers & roasted pepper and thus enjoy a very satisfying dish rich in flavor and nutritional value.
