Homemade Soft Pretzel

Homemade Soft Pretzel
Have you ever felt that you would like to have the physique of Goddess Kali with 4 hands so that you can do many things at the same time and that your own hands are not enough? This is with me when I decide to deal with the doughs, where times run, parallel processes and many different small things that must be done in the correct sequence, that's when I need excess arms, fellow hands, comfortable, convenient & ready to assist in whatever we strive…
So here too, the helping hand came unexpectedly and they became these very fluffy, brioche textured, bread rolls, soft pretzels, all weather and all-purpose. On the top are sprinkled with the seasoning, the characteristic thick salt and a brownish color thanks to the Maillard Reaction. Preserved for some days fresh and combined with a meal or filled with sweet or savory flavors, your choice.

Spring Flower Birthday Cake

Spring Flower Birthday Cake
Spring is here, the days will grow longer and we will see flowers blossom everywhere. This in itself is a good reason to smile more than this cake shows us how.
Let's dream of blue sky, tiny green buds that appear on the branches to transform into fresh, colorful flowers and in many places have already felt their presence.

To welcome the change of season with open arms, we created a white cake for the coming of Spring with freshly edible flowers with fluffy sponge cake filled with strawberries, and an easy, soft, lightweight, without too much sugar coating. We choose from the following list which edible flowers we can use (a little or a lot) and decorate this cake, a "joy of God" cake, a whole garden with optimistic messages and joyful looks to make our mood, but also a festive only for festive joyful events we prepare cakes, so it is not;

Blood Orange Marmalade

Blood Orange Marmalade
These wonderful oranges, blood oranges, with red spots on the skin and red flesh, made marmalade and is one of the most beautiful in the red scarlet color, and perhaps the most delicious.
Since childhood I was magnetized and impressed by their blood-red flesh! In the grand orangery of the grandfather, there were almost all sorts of citrus -and various varieties for some of them- from citrus (κίτρα) for their essential oil, which exported to Marseilles, lemons & lime to oranges, mandarins & blood oranges. Everyone with different tastes and sweetness but so beneficial to our body. Since then I have loved these fruits and it was the season, though very young, I ate lemon cut at 4 and sprinkled with salt. From this magical world of our orange tree a part of it has come to my property, thanks to the generosity of the people who so fought with their land.
Eternally grateful!

Chocolate Covered Strawberry Brownies

Chocolate Covered Strawberry Brownies
With gentle children's taste in which succumb from toddlers to old age, both innocent and outrageous, when soaked with alcohol, strawberries are popular and favorite.
Passepartout fruit, fresh used in a variety of sweets, juices and sorbets, at breakfast or brunch, in warm croissants, dipped in melted chocolate, in jams, cakes and Brownies… The melted chocolate, with its velvety, tender texture, swirls over and covers them as much as to hide their ruddy presence.
