Broad Βeans & Blites Salad

Broad Βeans & Blites Salad
We are going through a limp week, between an undecided spring and a summer that does not seem to have made a decision to settle. So adjusting our mood to the «big question of life»!?!: what do we eat today, we cook broad beans. A legume rather despised now and some may not even know of the existence of.
Broad Beans are eaten fresh with artichokes, peas, etc. But dry, boiled as a salad or liquor, here our case. Onions, fresh tomato, bay leaves and oregano make this dish scream out of enthusiasm. They are accompanied and eaten with a salad blitum, feta, olives and barley rusk.

Fresh Cherry Cake

 Fresh Cherry Cake
A traditional English cake that all we have to do is prepare a quick cake mix, stirring it gently, sinking cherries, with its pretty polka dot design and empty the mixture in an oven pan. It could not be simpler, no mixer, no blows, no long process, and fewer utensils for the sink.
It looks a lot like the french clafoutis, only the English in the classic form of cake use candied cherries. We preferred fresh cherries, which have already made their appearance on the market. I kept some for this and only the recipe because we love to eat them fresh.

Strawberry Spoon Sweet with Sangria

Strawberry Spoon Sweet with Sangria
Strawberries are a very delicious fruit and, of course, as it has often said here, it is not needed to cook for a long time, it does not benefit in any way and ends up having a rather useless dish. The long-term preparations make it lose some good nutrition and have a lot of time sprinkled with a lot of sugar, it's dehydrated because sugar acts as a catalyst for its dehydration and ends the strawberry dry without juice and taste.
Today we recommend short procedures with a reduced amount of sugar for a 10-minute Spoon Strawberry Sweet. Limit time for this sweet, which is flavored with cloves, honey and sweet Sangria wine.

Yellow Split Pea with Caper

Yellow Split Pea with Caper
Fava beans are a legume and not so common in our daily meals. However, despite the strict austerity of its presence in our Kitchen Stories, it is considered to be one of the most delicious dishes of legumes that we honor most often.
Gentle, delicate flavor and velvety texture in cream form is eaten as an accompaniment to ouzo-wine but also as a main dish with olives, feta cheese, toasted slices of home bread and a glass of red wine.
Throughout Greece, we know as the famous products of the Greek motherland the delicious Prespes beans, Sifnos chickpeas, Amorgo fava beans, Skyros and the most famous of all of Santorini, where it is grown for hundreds of years. All legumes are an enormous nutritional value for a Mediterranean / Greek diet with many health benefits.

Vine Leaves Maintenance 2-DIY

Vine Leaves Maintenance 2-DIY
In an earlier post we saw a dry way of Vine Leaves Maintenance. Today Kitchen Stories suggests another way to boil the leaves and then freeze them.
The season of fresh leaves is in May and June, depending on which area we are talking about. Find and cut your own fresh spring vine leaves, the first ones that Greek vineyards make or buy ready-made cuts from your neighborhood and prepare them to get into your cupboards so you can use them at any time. And do not forget the best leaves are gathered when they are still tender only by the climates of the Sultanina variety or Debina variety.
The proposed method is simple and very easy. So packaged will be kept perfectly in your freezer.
