Traditional Kalitsounia of Chania, Crete
In the traditional agricultural and urban Cuisine of Crete, the products that the rural populations, for centuries now, produce and consume on their own until communications changed, so that they can find them elsewhere inside or outside of Greece, played a leading role.
Some of these products had their place of honor on the big, important festive days of Christmas, Easter, August fifteenth… Then the housewives made the famous Kalitsounia in large quantities for family but also to friends, neighbors and visitors.
Today's Kalitsounia have their roots of Chania, whose inhabitants, due to the soil morphology of the place, had the main occupation of grazing sheep. As a result, dairy farming was a parallel profession, so that they could make use of the milk they had in the mountainous area of Psiloritis.

Easter Brioche Buns
Easter Brioche or Tsoureki Oriental in Greece is a traditional sweet bread, which is prepared throughout the year and especially during the Easter holidays. It needs yeast and good kneading to inflate and create beautiful fibers inside that will keep it fresh and fluffy for days. Also aromatic spices and citrus zest, such as lemon and orange, flavor it wonderfully. It is often decorated with red eggs and has different shapes and sizes.
This year we made small brioche buns to accompany our coffee for days.

Greek Easter Cookies

Greek Easter Cookies
Easter Cookies/ Biscuits -and not only Easter- with a different approach but with all the aromas of Greek Easter, such as Chios Mastic, Mahlepi, Kakoule (Cardamom) and the aroma of orange.
Light, tasty, soft, digestible and special. They are made very easily with their wonderfully velvety dough, which is given by the addition of pure yogurt and the light corn oil. They are relatively sweet with a little sugar added because our opinion is that this is how a cookie should be in order for a savory platter of cheeses and cold cuts to accompany our drink.

Greek Brioche-Easter 2020
Our Easter Tsourekia of 2020 was a beautiful experience, although their process was time consuming. We kept great waiting times for a total of 5 inflatables and which time (and inflatables) worked positively and substantially to make them fluffy, with strings and delicious buns.
Their ingredients are the classic for Tsourekia of our Greek Easter Brioche in a more enhanced dose, since 1 kg of flour was required.
Despite the long process, the hand work was very little. The dough, a perfect dough in texture and aroma also gave a perfect final result, which justified the effort and noise of the thing… But it is these family Easter traditions that create inextricable links and tasteful memories that connect us as a family, as a Nation.

We wish you a Happy Easter, with a lot of strength, so that we can face an invisible enemy who changed our lives!

If we close our eyes and think of Greek Easter, Orthodox Easter, the image to be formed in our mind is a delicious well done, braided super-soft, fluffy and moist brioche with a red egg. This is the view of our Greek Easter!
Sometimes easy with simple procedures and sometimes complicated and demanding the Tsoureki remains the favorite flavored sweet bread large and small. It has primacy in our Easter & Easter table with red eggs and bagels. Customs that blend and reconcile families and friends.

Koulourakia: Cypriot Easter Cookies
These Easter Cookies are traditional Cypriot Easter buns, which although Lenten are traditionally made on Good Friday.
They are flavored with oriental spices but also with Chios mastic and their aromas resemble those of Easter Tsoureki. They are ideally suited to our coffee and we certainly have more than one.
Daktylies is a type of long shaped-bread, which is separated into smaller parallel pieces, in order to be cut off easier and evenly. The ingredients used for daktylies are flour, leaven, water, sesame seeds and aniseed. Many housewives in the countryside continue the tradition and bake daktylies for the needs of the family.

Mini cookies of a mouthful, fasting, but without the exclusion of the pleasure of their delicacy and the rest of the year, the non-fasting.
These are the perfect snack for those who are watching their diet. They are dairy-free, egg-free, butter-free but with tahini, orange juice and zest, amber brandy & aromatic spices, which give them their dark color!

Trifles, these beautiful desserts, served in transparent glasses, with alternating layers of different ingredients & flavors, are the most sophisticated way to utilize a leftover Cake or the rest of an Easter Brioche, which simply ran out, was not consumed and we don't want to throw away. Besides trifles we can utilize, making small chocolate truffles and a coating-camouflage to show us renewed as a new dessert at all insignificant.
A slightly wet cake or Easter Tsoureki or Cookies are ideal to absorb moisture and flavors from other ingredients which it is paired. With a pastry cream, whipped cream and our favorite sweets create a delicious dessert!

No Knead Greek Easter Brioche-Tsoureki
Easter buns without kneading with easy and simple process of "sleep bread" of Focaccia. The waiting time to activate the yeast is higher, but it all happens during the night, with the dough in the fridge "sleeping", and only the next morning you make in braids or buns put small stick forms. This fermentation process has the effect of improving and enhancing the taste.
The addition of spices makes them particularly fragrant and delicious. And the honey makes them mildly sweet, fluffy and very soft.

Traditional Cheese Pies made in Crete with tyromalama & anthotyro (local Cretan cheeses).
Those outside Crete, and those who are not accustomed to the Traditional Cuisine, will see it as another «cheese pie» quite complex. The others, who have strong references and relationship with Crete, definitely in sight will moved remembering some Easter childhood or adult life inextricably linked to the traditional customs and culinary habits of their homeland.
The pies here in the salty version, made with phyllo sheet, which opened in the machine and cut into uniform discs were then filled with cheese, dusted with sesame and of course in the oven revealed their taste and their wonderful rustic form, which refers to the lamps, which once used to illuminate.

But that which we are interested in is to enjoy a delicious dessert, of which there are many variations and anywhere only friends!
A classic recipe is one that I follow for years and really all these that have tried it like it a lot. The current proposal is a small "herecy" since it adds cinnamon biscuits. Was this desire, which, however, gave a touch aromatic sweet cinnamon, going with coffee.
There is a procedure of preparation of different materials, which have to be prepared separately and then joined together.
