Christmas Stuffed Turkey
Christmas turkey stuffed with a filling without giblets or minced meat. A filling with tasty rice, mixed with nuts, such as cashews and fresh chestnuts, and dried fruits like cranberries, raisins and dates! The much talked about, trip to China was a lifelong dream and became a family affair to get it to be realized. Discussed months ago, decided, planned, initiated and completed in October of '15. Preparations for this trip were quite lengthy, as had become a series of procedures not only bureaucratic forms, passport, visa, etc., and timing, tour desk, problem details, selection of cities and interesting, the most important tourist destinations, as though programming vaccines etc…
We traveled to five Chinese cities using planes, high speed trains (300 km/h) and Maglev Train (magnetic train with a speed of 430 km/h and the distance of 30 km from the city of Shanghai to the airport covered just 8') and ship. It was more concentrated in terms of journey trips, we had ever done. The posture and movement alterations were short and dense between them, and the vast distances and the images and information bombing.
We discovered places of incredible beauty and unique presence, tasted authentic Chinese Cuisine, we walked for hours, soaking up the secrets of the Imperial Forbidden City, we admired the size of the vanity of the Emperor and the Terracotta Army, climbed to all yellow rice fields, along with the long-suffering local population, and wondered upon the ramparts of oversized Great Wall. We crossed sailing 83 km along the reaches of the beautiful Li River, a gallery of nature. We saw fishermen to fish using trained cormorants, we bike ride on a fortification wall 700 years (Ming Dynasty in 1370), we enjoyed our evenings beautifully lit banks of lakes and tastefully designed parks, the sound of Chinese music in clean cities. Mixed in with a bustling crowd, were guided by lovely gardens with old trees, sacred pagodas, world heritage sites, museums, markets, we felt the Economic "Heart" of China beating at a rapid pace and more. We have seen the history passing before us the best moments of the human species but "heard" the moan of all those that struggled to make all.
Today I present only part of the culinary, diverse and multiethnic Chinese Kitchen without words and without the special tasty choices of some Chinese, which are far from ours and may cause feelings of aversion.

The Greek traditional pies of every kind and shape and baked or fried is a very favorite snack for the whole family.
They can be made as isolated individual rolls, crescents shaped croissants, spiral, squares or triangles. The main component is the homemade handmade dough or ready-made dough leaves and cheese, which in many cases of pies is the mature greek feta, alone or combined with other fresh white or yellow cheeses such as katiki, the myzithra, the anthotyros, the gruyere etc. is the favorite stuffing of many of them. As these baked cheese soften, melt and thus the taste and components are diffused into the dough.

In the current proposal the Kitchen Stories make these pies with yoghurt dough, which is easily molded, becomes a flat sheet and stuffed only with crumbled feta cheese, mixed with egg. Then it rolls and cut into triangular pieces.

Candied cherries, like Italian Amarena or French Griottines, in small quantity and in an easy and quick preparation, as will be used for making ice cream and which will soon show you.
It is not the known version of candied fruit, such as Orange Peels and others, which we use in cakes etc. It is semi-candied cherries. I chose the cherries to be cut in two and not remain intact in order to be incorporated into the cream and in which our tooth only will meet.
It is not jam nor sweets, we make for the winter. It is something between these two. Their syrup is more dense and flavored with whole lobe vanilla and lime peel.

Nocino Walnut Liqueur
Nocino is an Italian liqueur with very dark color and made from small green walnuts while still unripe.
There are many recipes for this liqueur, with several days of exposure to sun, etc. I preferred a short and simple process with the only difference that in this case you let it for 6-7 months to mature the flavor and bring out the aromas.
Adding lemon peel reduces the astringent taste of the liqueur. If you have easy access to walnut, try to make this lovely, traditional, homemade liqueur.

Rich in flavor and ingredients savory pies are the basis of Greek cuisine. The pumpkin pie became favorite and delicious meal. Spicy feta cheese, fresh zucchini, sweet carrot, leek, green onion and herbs are combined into a crispy, 'village' style fillo pastry for necessary rustic texture, sprinkled with plenty of sesame. The difference is the addition of a soda soft drink can, which makes it incredibly fluffy, light, airy.
It is unlikely to last more than a day even if it seems huge! It is done to fill hungry stomachs. The day this was served was a busy day, dedicated to painting and the appetite opens by working.

Cheesy Croissants
French croissants small, fluffy, cheesy and very easily. With simple procedures and sure success we make a tender, velvety dough with spreadable cheese, sprinkled with parmesan. We roll and here they are. The poppy seeds graces and flavors even more.
Eaten plain or stuffed with sweet and savory flavors. They are wonderful supplement of a loose breakfast. Offered for beautiful treats, canapés, finger food for office, for breakfast, for a picnic. Small sandwiches stuffed with a thin slice of cheese and our favorite prosciutto, minced ham, salami or whatever sausage we like and a few rocket leaves. Et voilà!

A really ingenious idea to create a very easy and very light pasta dish with minimum effort and definitely delicious result.
In recipes such as this one, with the general title "one pot pasta" (or chicken etc.), ingredients come together in the pot and cooked together. It is a succulent pasta which, when you taste it, you will want to repeat making it often, especially when time is pressing and the mood for something more complex is not here.
