Sweet Semolina Halva with Honey
An aromatic semolina halva so apropos due to fasting and specific, due to the addition of honey.
The honey gives the halva a more soft sweetness compared with sugar, and so it becomes -let's say- somewhat more healthy. The orange gives it extra wonderful aroma. All the rest do the spices. Lots of cinnamon, asteroid anise and cloves. Do not forget the crushed hazelnuts on top that blends perfectly with halva. Try this lenten dessert and I'm sure you will enjoy it!

Sweet Semolina Halva with Honey

Ingredients (4 servings)

  • 200g (7.1 oz) coarse semolina
  • 280g (9.9 oz) honey
  • 120g (4.2 oz) vegetable oil
  • 650g (1.4 lbs) water
  • 1 orange, juice & zest
  • 1 cinnamon stick
  • 10 cloves
  • 1 star anise
  • cinnamon powder and crushed hazelnuts for garnish
In a saucepan, over low to medium heat, add the oil and when hot add the semolina.
Stir constantly with a wooden spoon until the semolina inflates and lightly browned without burning.
Also, in a small saucepan, add the water to boil and add the honey. Stir to dissolve.
Add the spices, the cinnamon broken into smaller pieces, the star anise and cloves. Just boil and leave for 2'-3' to make a light syrup.
Remove the spices and pour the syrup, carefully, into the pot with the roasted semolina.
Stir constantly until absorbed by the semolina and detaches from the sides of the pot. Remove from heat and add the orange juice. This will ensure that each granule is fluffy and plump. Mix.
Allow the halva to cool slightly into the pot and then fill, by pressing with a spoon, the Mini Wonder Cakes silicone cases.
Spread the surface and let it cool completely. Un mold the mini cupcakes and sprinkle with cinnamon, orange zest and crushed hazelnut.
