We are going through a limp week, between an undecided spring and a summer that does not seem to have made a decision to settle. So adjusting our mood to the «big question of life»!?!: what do we eat today, we cook broad beans. A legume rather despised now and some may not even know of the existence of.
Broad Beans are eaten fresh with artichokes, peas, etc. But dry, boiled as a salad or liquor, here our case. Onions, fresh tomato, bay leaves and oregano make this dish scream out of enthusiasm. They are accompanied and eaten with a salad blitum, feta, olives and barley rusk.

Fava beans are a legume and not so common in our daily meals. However, despite the strict austerity of its presence in our Kitchen Stories, it is considered to be one of the most delicious dishes of legumes that we honor most often.
Gentle, delicate flavor and velvety texture in cream form is eaten as an accompaniment to ouzo-wine but also as a main dish with olives, feta cheese, toasted slices of home bread and a glass of red wine.
Throughout Greece, we know as the famous products of the Greek motherland the delicious Prespes beans, Sifnos chickpeas, Amorgo fava beans, Skyros and the most famous of all of Santorini, where it is grown for hundreds of years. All legumes are an enormous nutritional value for a Mediterranean / Greek diet with many health benefits.

Fava is delicious legume and tastiest are the fava Santorini. Combined with raw olive oil & raw, chopped onion or fried and caramelized onions with fresh tomatoes or tomatoes rain-fed Santorini. Then we give the title of "married!". Additionally we can enhance the flavor in vinegar with olives, capers, fennel, fennel & lemon.
Usually served as a summer ouzo meze and on your Lenten table.

Garnished with chopped onion, parsley, oil and lemon and sprinkled with freshly ground pepper, sumac & chili peppers for color and flavor and all together for health and vitamins! Whether you say it bean salad or Turkish piyaz, is one of the most classic dishes with beans after the bean soup.
All beans contain high amounts of protein and fiber. An amazing combination for the protection of the digestive system and moving the food through the intestines. Fiber helps to better digest food and help ensure that the waste products to be eliminated. It is known for their irreplaceable effects in the digestive tract, while protein helps the body to maintain optimal health and build healthy muscle mass.

The delicious fava comes from the Split peas. They are an agricultural or culinary preparation consisting of the dried, peeled and split seeds of Pisum sativum but quite sidelined compared with other legumes of Greek Kitchen.
In a proverbial expressions find and this relative to beans: When something suspicious happens in a case, we say that "fava has a pit". This one does not, except in the habit of adding a little olive oil in the center by opening a small puddle.
You boil it plain with a little onion and aromatic fennel and serve mashed, lukewarm or cold, garnished with olives, dry onion and sprinkled with chopped dill. Combined with tasty onion pies.

Slow Cooker Gigantes Beans
Slow cooking is an ideal method of cooking and this is possible by a Slow Cooking machine. Beyond any positive elements, such as energy savings, convenience for a delicious meal, etc., we have more personal time free to utilize in wherever else we want.
Put all the ingredients of the food in the pot and forget it for 6-8 hours depending on the temperature you choose. It is a convenient solution to put the food to be cooked all night (or all morning) and the next day we ready for serving hot food.
Cook my Slow Cooker Giant Beans, whom I had not previously soaked! I admit that the result was a pleasant and delicious surprise.

Red Lentil Soup

Lentils with orange, intense color, and unmatched flavor, taster than the simple lentils we all know.
Lentils came in my kitchen, from Xanthi, covering many miles on their way.
At first glance I was thrilled by their color, but I did not know their taste. I gained first hand experience, of this little known product, by cooking them!
You can find them is many health stores. In other cities around the world they may be easier to find in local markets.
Worth the try.

Delicious beans with onion, celery, carrots and olive oil. All tied together, compose and take off with a delicious result, a dried bean soup!
The ingredients are simple and we can find them easily. May be the olive oil is in some places hard to find, but the rest are common everywhere, I hope.

Baked Beans. Considered one of the tastiest dishes of Traditional Greek Cuisine. Simple yet so delicious and useful to our diet. Lentils are among the first plants that the man (and woman:) began to systematically cultivate and one of the more important legumes in our diet.
There are several varieties with different size and color of seeds, such as blonde, green and brown.
The lentils are cultivated since ancient times (circa 2,000 BC) and were known in ancient Egypt. Jews, Greeks and Romans cultivated and consumed them.
It is a legume with great nutritional value, rich in iron, phosphorus, carbohydrates, protein and B vitamins.
