A traditional dish of Cretan Cuisine and particularly of Chania, where its main ingredient grows wild in nature, and which is now cultivated, Stamnagathi (spiny chicory)!
A simple and delicious combination of vegetables and meat. It is the healthiest version of consuming meat (Arnaki Fricassee).
Stamnagathi is one of the few vegetables that is equally enjoyable to eat raw, boiled or cooked.
It is best known from the coastal and mountainous areas of Crete where it grows wild, although in recent years it has been cultivated extensively in several areas of Chania.
We also find it wild in Central Greece, the Peloponnese and the Cyclades, even in Malta!

For those who don't have time to roll out a sheet of dough or don't know how, then ready-made phyllo crust is a good choice and we find it ready, fresh or frozen in the refrigerators of supermarkets.
I suggest you save this delicious pie recipe, which you can make with the filling you want and thus enjoy an easy and tasty pie and with cheeses of your absolute choice. The ingredient that makes it special and very fluffy with a crispy crust on its surface and with a wonderful taste is a can of Carbonated Water. A drink made from natural mineral water with natural lemon and lime flavors, extremely digestive and refreshing.
Try it at the first opportunity.
If we want, we can prepare it the night before and put it in the oven the next morning. This way we will have a hot, fresh, delicious snack for a Sunday Breakfast.

Lemony Cream Cake!
This creamy Cake/Layered Cake, which is wonderfully fluffy and musky scented lemon, filled with traditional goat yogurt combined with Katiki Domokou (ricotta), gave us pleasant tasting -but also festive- moments.
The lemony cream inside, with intense acidic tones, is sandwiched between 2 layers of crumbly dough mixture, which makes it very special and wonderfully delicious. The almond fillet enhances its taste and appearance. It is barely sweet because this is our choice, so we accompany it with a sweet red wine.
We liked it doubly because we had in mind to enjoy it during the holidays and so we named it "Birthday Cake" in honor of the birthday person...

With many variations, different ingredients, a different way of serving and many different names, pies are a characteristic traditional delicacy in every corner of our country. Savory or sweet, with or without foil, round, triangular, simple or complex, traditional pies are a big chapter in Greek Gastronomy.

Besides the variations in the sheet - fresh handmade sheet or ready-made sheet or even without a sheet - there is a wide variety of sheets, some thin and transparent and others thicker. Some pies are prepared with several layers of sheets in the pan and a mixture is thrown inside them, such as spinach, cheese, various greens or vegetables. The variety of pie filling has no limits. You only need your imagination and the pure and fresh ingredients of each place. In addition to the classic pie with cheese or greens, you can put meat, sausages, vegetables, frumenty, pasta and whatever else you want in the filling!

A very fluffy cake, very special without many eggs, with yogurt and olive oil. It is one of the cakes that have the name "Sponge Cake" (without referring to the well-known sponge cake, which has other ingredients and a different way of making it), for the reason that it is really so soft & fluffy.
On its surface is added extra yogurt and jam - any jam we like - which, by stirring them lightly with a toothpick, partially sinks into the interior of the cake during baking and makes it delicious and moist. Try this easy & perfectly fluffy cake.

Savory Pumpkin Pie
It was the last pumpkin we had outside in the cool of nature in a shady place. We made it into a pie and gave the neighbor a big piece too! The last winter pie for this year. The last yellow pumpkin for this year.
I share with you one of my favorite pies. Sweet and salty at the same time. But definitely a pie for food. It contains the traditional sour frumenty -trachana elsewhere- of Crete, the land of my ancestors and whose taste accompanies me since I was a child. The rest of the ingredients are crushed vermicelli, which becomes invisible after baking, Greek feta, but also eggs and milk and plenty of dried onion and of course olive oil, from our production Cretan olive oil.

Easter Brioche or Tsoureki Oriental in Greece is a traditional sweet bread, which is prepared throughout the year and especially during the Easter holidays. It needs yeast and good kneading to inflate and create beautiful fibers inside that will keep it fresh and fluffy for days. Also aromatic spices and citrus zest, such as lemon and orange, flavor it wonderfully. It is often decorated with red eggs and has different shapes and sizes.
This year we made small brioche buns to accompany our coffee for days.

Greek Easter Cookies
Easter Cookies/ Biscuits -and not only Easter- with a different approach but with all the aromas of Greek Easter, such as Chios Mastic, Mahlepi, Kakoule (Cardamom) and the aroma of orange.
Light, tasty, soft, digestible and special. They are made very easily with their wonderfully velvety dough, which is given by the addition of pure yogurt and the light corn oil. They are relatively sweet with a little sugar added because our opinion is that this is how a cookie should be in order for a savory platter of cheeses and cold cuts to accompany our drink.

Velvety and fragrant this cake, with traditional yogurt and hazelnut flour, is a thin, without much sugar but very soft dessert, ideal for breakfast and snacks. It has a beautiful dark color from the hazelnuts and the intensity of their taste. Greek traditional yogurt makes it particularly fresh and tastes good. If you then sprinkle it with icing sugar, it will also be perfect at the end of a meal combined with a wonderful aromatic coffee. Children will love it and it is ideal to consume dairy products without even realizing it.

Everyone likes this pie, I always make it with a puff pastry sheet to keep all the delicious, soft and fluffy filling inside. A sheet at the bottom, a sheet at the top and in between a filling based on a light béchamel cream, made with corn flour and which makes it look like a millefeuille.
We choose plenty of favorite cheeses & hams. I chose to put smoked turkey fillet but also any other ham, that you like, does to make it delicious. Make holes in the puff pastry to remove the moisture inside the pie and not to wipe the sheet, so that it becomes crispy.

Brioche Burger Buns
Brioche dough tends to be heavy, as it is an enriched dough. This means that, in addition to the usual suspects to make bread, such as flour, water, salt and yeast, brioche dough includes egg, butter & full-fat milk. These buns, however, are light, airy, soft. So we have an enriched dough with a great taste, and not a heavy dough, with which brioche is usually made.
Making these homemade buns, with a neutral taste, so that they can be made sweet or savory choices and to enjoy them in many different ways:
Plain to accompany a meal or make sandwiches & hamburger. Since they are not sweet at all by choice.
Plain to accompany a meal or make sandwiches & hamburger. Since Cut in half and spread with butter and jam for a pleasant, hearty breakfast, they are not sweet at all by choice.
Filled with chocolate, praline, jam of our choice or chestnut cream spread, like the ones here, to make them more festive… and which are our preference for Christmas Day.
