Ingredients (8-10 Servings)

  • 6 Phyllo Pastry Sheets
  • 200g sugar
  • 4 eggs, large
  • 200g Greek strained yogurt
  • 150g corn oil or half with olive oil
  • 20g baking powder
  • 1 tsp. baking soda
  • 2 tbsp. fine semolina
  • zest of 2 oranges
  • almond fillet for coating
Put the sugar and eggs in the bowl of a stand mixer. We beat them well for 10' until the mixture swells and becomes a fluffy, whitish, thick cream.
Inside bowl of a stand mixer, add the rest of the ingredients except the sheets: Yogurt, oil, baking powder, soda, semolina and the zest of 2 oranges. Beat them for 1′-2′ to mix and stop the mixer.
With a pair of scissors, cut the leaf into small pieces directly into the beaten mixture and gently mix in each addition with a fork. If the leaves are frozen, break them with your hands without thawing them.
Butter a 20x30cm baking dish and pour the orange pie mixture into it.
Sprinkle the whole surface with plenty of almond fillets.
Bake in a preheated oven at 180℃ 356℉ with air for 40′-45′. If it starts to color quickly, cover with aluminum foil. Test with a stick/straw to make sure it comes out clean. Take out of the oven and leave to cool on a wire rack.

Hot Syrup

  • 250g fresh orange juice
  • 300g of sugar
Put the sugar and orange juice in a saucepan. We boil them for 5'. Cut into pieces and pour the hot syrup with a deep spoon over the orange pie so that the syrup is well absorbed. Let it absorb and sprinkle with extra almond fillets.
