Fresh Peach & Black Grape Upside-Down Cake

Fresh Peach & Black Grape Upside-Down Cake
The feeling that simple is the best is almost always true when dealing with primary, fresh, excellent, seasonal ingredients. Knowing that June is the peak of the peach season, the best ingredient for a simple but impressive dessert.
Fresh, summer, dessert & juicy peaches give us the opportunity to enjoy them in many ways, primarily in sweet desserts but in savory tastes too, in drinks & smoothies or in compotes.
The cake is baked low and slowly for about 40 minutes until the surface becomes red-gold and sliced peaches inside softened and caramelized from the addition of the sweet Black Grape but also from brown sugar and butter. The cake itself has absorbed all the sweetness of the candy. The aroma from the oven while the cake is baked is heavenly, with sweet vanilla and syrupy caramel peaches. The only downside to this summer's upside-down cake is that you must share it…

Excerpt from the introduction:
«Αναρωτιέμαι συχνά που είναι το απόγειο της μαγειρικής. Είναι τα πιο φρέσκα υλικά, οι πιο πολύπλοκες γεύσεις είναι το καθημερινό ή το σπάνιο; Δεν είναι τίποτε απ΄όλα αυτά. Το απόγειο δεν είναι ούτε η κατανάλωση του φαγητού ούτε το μαγείρεμα, αλλά η προσφορά του φαγητού και η συντροφικότητα…»

Filling

Wash the peaches and cut into thin slices ~1 cm (0.4 in).

Melt the butter and pour it into a baking mold, with Ø24-26cm (Ø10in). From the top, sprinkle the brown sugar to cover the whole base of the baking mold. Roll the slices of peaches cyclically and with a teaspoon we sprinkle a bit of sweet spoon of grape. Leave them for a while until we prepare the cake mix.

Cake (~8 servings)

  • 200g (7.1oz) flour
  • 160g (5.6oz) sugar
  • 2 large eggs
  • 1 sachet (20g) baking powder
  • 1 pinch of salt
  • 120g (4.2oz) butter, softened
  • 130g (4.6oz) milk
  • 1 tsp vanilla extract
In medium sized bowls, we pour the sugar and eggs and gently beat them with the whisk to homogenize. Add the milk, butter, vanilla extract. Stir. Combine the flour with the baking powder and salt and sift them all together. Add them to the milk mix and gently mix with the liquid mixture.
Bake in a pre-heated oven with air at 180℃ (356℉, Gas Mark:4.2), on the lower grill for 40' until golden its surface. You place it on a wire base to cool down. Turn it on a platter to bring the caramelized peaches over.
Enjoy it with an ice cream sauce or with extra sweet Grape.
