Cheese & Garlic Bread

Cheese & Garlic Bread
I love the special way in cutting diamonds, just a bite size and suitable to form cheesy strings of melted cheese inside, and pull and stretch each piece of garlic bread! So both buttery and garlicky, excellent.
It is an economical meze solution for the next gathering of friends for beer and drink. It is very popular with both young and old, it is becoming more and more like a game the way of enjoyment. The best part is the base of bread… butter and cheese drip down and as it gets baked it becomes delicious and crisp… guarantee!
NOTE: it is strictly eaten with the fingers!

Excerpt from the introduction:
«Αναρωτιέμαι συχνά που είναι το απόγειο της μαγειρικής. Είναι τα πιο φρέσκα υλικά, οι πιο πολύπλοκες γεύσεις είναι το καθημερινό ή το σπάνιο; Δεν είναι τίποτε απ΄όλα αυτά. Το απόγειο δεν είναι ούτε η κατανάλωση του φαγητού ούτε το μαγείρεμα, αλλά η προσφορά του φαγητού και η συντροφικότητα…»

Ingredients (6 servings)

  • 1 small loaf of fresh bread
  • 120g (4.2oz) grated cheese (mozzarella, gouda etc)
  • 100g (3.5oz) butter
  • 3-4 cloves of garlic
  • 1 tsp salt
  • 2 tbsp parsley or mint or basil
From the garlic press we pass the cloves of garlic, tart them and pour them into a special bowl for the microwaves, along with the butter and salt to melt the butter in creamy texture. Add the parsley finely chopped and stir.
Cut the bread diagonally in diamond-shaped shape at 2cm/1", not to the end so that the slices are not loosened so that they are held in the bread base.
With our fingers or with a knife, open the cutting points and pour spoonfuls from the melted butter mixture until it finishes.
Add the grated cheese, pushing it through the notches. Wrap the loaf with aluminum foil and bake in a preheated oven at 180℃ (356℉, Gas Mark:4.2) for 15'-17' until the cheese has melted.
Remove the loaf from the oven and, with a pair of scissors, cut the foil lengthwise, open it well and put the garlic bread in the oven for another 5' to brown the bread. Eat warm with fresh salad as main or appetizer.
